Smoked Cheese Burger Meatloaf

It’s been rainy and gray outside…comfort food was mandatory. One of our favorite (and yours, too) is a hearty meatloaf. We made it even better by using lots of Ken’s smoked cheese that Patti shredded. We used smoked cheddar, but you can use whatever shredded cheese you like. To keep it moist we used Country Bob’s All Purpose sauce and to make it fun Patti used crushed corn curls (like Cheeto’s) instead of cracker or bread crumbs.

Cook Time: 90 minutes at 425 degrees (218c)

 Mix Ingredients and Place in Your Dutch Oven

Directions: Smoked Cheese Burger Meatloaf

Mix well all ingredients in large bowl. Place mixture in large, lightly greased cast iron Dutch oven. Preheat your Pacific Living Outdoor Oven to 425 degrees (218c) and set your Dutch oven on the shelf. Bake your meatloaf for 1 ½ hours or until you reach an internal temperature of 165 degrees (74c) U.S.D.A. safe. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note:

The bottom stone gets “HOT” so you need to stay right with it or you will burn what your are cooking. We only use heavy cast iron or baking dishes here. For most things I have found that it is better to use the middle shelf. You can use a stone here or not depending on your cook.

About our Recipes

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

Ingredients
  • ground beef, 85/15
  • 4 cups smoked cheddar cheese, shredded
  • 2 cups Country Bob’s All Purpose Sauce
  • 1 egg, beaten
  • 1 large, sweet onion, chopped
  • ½ cup fresh garlic, minced
  • 1 Tablespoon Chef of the Future Floribbean Rub & Seasoning
  • 2 teaspoons fresh black pepper, ground
  • 1 Tablespoon cayenne pepper, optional
  • 3 cups cheese curls, crushed
