Pecan Scotch Pie

Pecan Scotch Pie was born because pecan pie is Ken’s favorite. We already have a wonderful recipe for pecan pie with chocolate, so we wanted something different. Patti had an ‘aha” moment and remembered we had butterscotch chips from a recipe we apparently forgot all about. This pie turned out crunchy and creamy with an extra whisper of pecan smoke because we used Mountain Maple pellets in a wedgie for that “Kiss of Smoke”.

St. Paddy’s Irish Nachos

St. Paddy’s Irish Nachos, we love nachos for appetizers, snacks and sometimes for dinner. Our friend Peggy Fairweather came up with the idea of combining nacho toppings over potatoes. She knows Ken is a meat & taters kind of guy. So, in honor of St. Patrick’s Day we made nachos with some of our Shredded Chuck Roast, French fries and a topping of food…

Firehouse Stuffed Meatloaf

Firehouse Stuffed Meatloaf, Winter weather, even in California, begs for meatloaf and mashed potatoes. Our friend Pete makes award winning sauces and rubs. One taste and you’ll know why. We also really like that salt is never the first ingredient. Of course, if you’re making this recipe for your local firehouse you might want to triple the recipe. Patti and I have set one…

Smoked Chuck Roast Argentinian Style

Smoked Chuck Roast Argentinian Style, we love the BIG BEEF flavor of a chuck roast. We wanted tacos and there are none better than with smoked shredded beef with a "Kiss of Smoke". This cook was fun because I got to use a 10-cent yard sale treasure, Grandma’s old roaster again! Loaded it up with peppers and onions and into the smoke for about 5…

Chipotle Beef

Chipotle Beef, we love good rich beef flavor, then add the smoky influence of the Southwest. I am in heaven. The tortillas were tougher than the beef. In a sauce made from fresh peppers, onions and tomatoes from the Murrieta Farmers Market along with chipotle peppers it was multiple layers of awesome. Hot enough for Ken and mild enough for Patti. There are so…

With the help of our 10” Lodge Cast Iron Griddle and our Pacific Living Outdoor Oven we had a hearty, fun and delicious dinner. We especially love our…

Bourbon Bacon Pork Sirloin Chops

Bacon Bourbon Pork Sirloin Chops, Off the Hook!!! Patti picked up these beautiful chops and I wanted to try something a little different. Thinking I would put a cast iron griddle on the grill and see what happens. The Bourbon Bacon sauce caramelized nicely, adding a ton of flavor to these moist and tender chops. We did these on our Louisiana Grill/Smoker with Mountain Maple…

Carnitas Margarita Style

Carnitas Margarita Style was better than GOOD it was a fiesta for the senses! Carnitas Margarita Style with a “Kiss of Smoke" on our Green Mountain Grill smelled wonderful throughout the neighborhood. This was a big Dutch oven recipe and we had more than a few dinners this week. We served them as soft tacos and over rice, plus sharing with neighbors. A splash (or…

El Burrito del Diablo

El Burrito del Diablo or The devil's Burrito. We love fiery beef burritos, so we thought we would smoke up a pot of La carne del Diablo or The Devil’s Beef on the gasser. A 4-pound chuck roast, 5 different Chile peppers, onions and garlic for a 5 hour cook. All with a “Kiss of Smoke” from a wedgie loaded with GMG’s Texas Blend…
