Uncle Bubba’s Brandy Bacon Jam

 

Uncle Bubba’s Brandy Bacon Jam. I can’t say it enough “Everything is Better with Bacon”! Our jam is a pound of bacon ends and pieces, slow cooked with onions, smoked garlic, and brandy in to a sweet and spicy burger topping. (Have you ever heard me say I LOVE BIG BURGERS!)

Rich and savory, a great appetizer, topping on cheese and crackers, dogs and, of course, burgers. Awesome on scrambled eggs or toast with your morning coffee. You’ll be tempted just to eat it with a spoon. (I did!)

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on one of our Grills or Smokers, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Our Favorite Grill Accessories:

We have a few “Grilling Essentials” that we love. First, we have “Grill Grates” on all of our grills. Love the control they give us with our “cooks” from smoke to sear!

A “Smoke Daddy Cold Smoke Generator” for “Cold Smoking”…

A “Wedgie” for creating smoke blends or just bring smoke into our cook.

And Don Godke’s Downdraft on my Green Mountains Grills”. What the “DownDraft” does is hold the smoke a little longer in the cooking chamber. Adding more smoke flavor and making it easier to create smoke blends to your liking.

Ingredients: Uncle Bubbas Brandy Bacon Jam 

  • 1 lb. bacon, cut into 1″ pieces (I wanted BIG pieces)
  • 1 large, sweet onion, rough chopped (I wanted BIG pieces)
  • ½ cup brandy
  • ½ cup molasses
  • 1/3 cup strong brewed coffee
  • 2 TBSP smoked minced garlic, (see recipe) or garlic to taste
  • 2 TBSP butcher’s grind black pepper
  • 2 tsp apple cider vinegar

Cooking Directions: Uncle Bubbas Brandy Bacon Jam 

Cut up your bacon, onion and set aside (I wanted big chucks for a burger topping)

Place the bacon into a skillet and cook until crispy. Use a slotted spoon and place the bacon onto a paper towel, reserving about a tablespoon of bacon fat in the pan.

Add onions to your skillet and sauté in the bacon drippings, stirring often until they start to caramelize. (10-15 minutes)

Stir in your garlic, black pepper, molasses, vinegar, coffee and brandy adding the cooked bacon.

Stirring often continue cooking until the liquid reduces and it thickens to your taste. About 10 to 15 minutes.

Remove from heat, let cool and grab a spoon!

NOTE: I did a rough chop on the bacon and onion, because I wanted “Big Chunks” to spoon on top of a burger I was making this for. You can cut these finer to spread if you like.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Monument, Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
