Butter Pecan Stuffed Texas Pork Chop, Ken wanted a stuffed pork chop…a big one. So Patti bought one aka bone-in pork loin roast at almost 6 lbs. Now that’s a pork chop! Being this was a manly sized pork chop power tools were required. Ken used a drill to make a whole for Patti’s butter pecan stuffing. Then, a butter pecan glaze with maple syrup, butter and pecans. We used a generous amount of Cattleman’s Grill Original Cowboy Seasoning. This seasoning has coffee as an ingredient which just adds to the rich and smoky taste of the pork. Sweet, savory and delicious!

My Dad and I had a thing going for over 20 years on who had the biggest Stuffed Pork Chops. If he was still with us I would have won with this Butter Pecan Stuffed Texas Pork Chop. With power tools in the kitchen to !

Prep Time: 15 minutes
Cook Time: 1 hour at 225 degrees (107c), 90 minutes at 300 degrees (149c)
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets: Pacific Pellet Mountain Maple

Ingredients: Butter Pecan Stuffed Texas Pork Chop

  • 5 ¾ lb. bone-in pork loin roast

Ingredients: Stuffing

  • 1 cup butter
  • 8 ozs. bread stuffing cubes
  • 1 ½ cups chicken stock
  • 2 cups sweet onion, chopped
  • 2 cups celery, chopped
  • 2 cups fresh pecans, chopped
  • 1 Tablespoon Cattleman’s Grill Original Cowboy Steak Seasoning
  • 1 stick of butter, melted
  • 2 cups pure maple syrup
  • 2 cups fresh pecans chopped

Directions: Pecan Stuffed Texas Pork Chop

Make 2” round horizontal hole through the pork, I used a drill. It is easier to drill if the meat is partly frozen.

In a large saucepot sauté onions and celery in butter until veggies are soft. Add remaining stuffing ingredients blending well. Cover and simmer on low for 5 minutes. Turn off stove and let stand for 5 additional minutes. Let cool.

On a large piece of plastic wrap roll stuffing into log. Wrap stuffing log tightly and place in freezer for at least 2 hours or overnight. Next day take the frozen stuffing log and put it into the hole you put in your Texas Pork chop. Let it come up to room temperature before you put it on the grill.

We did our Texas Pork Chop for 1 hour at 225 degrees (107c), 90 minutes at 300 degrees (149c). U.S.D.A. safe for pork is 145 degrees (63c). I pull the meat off the grill at 140 degrees (55c) keeping in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps. Brush the glaze on about the last 10 minutes of your cook.

Tonight I was testing my new Maverick Redi Check ET 733 wireless BBQ and Meat Thermometer. Lots of cool features, you can even monitor 2 different meats at the same time. I set it for pork and when it came to temp it beeped us. Easy and simple way to keep an eye on your meat.

Glaze;

In small saucepot over medium heat blend melted butter with pecans and maple syrup. Cook to a low simmer. Brush over pork during last 10 minutes of cook.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Cooking In the Oven:

We have been getting requests for recipe conversions for the oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time.

It is the same thing, time and temperature is what it is all about. The Green Mountain grill is just like your oven except it uses wood pellets and has wheels.

I did 20 minutes here at 350 (174c).
