Smoked Pastrami Pin Wheel
We love pastrami sandwiches with hot mustard, cheese and dill pickles. Happily corned beef has been on sale and smoked corned beef is pastrami! To make it the perfect sandwich roll size we butterflied the corned beef, smeared it inside with mustard, layered on slices of Swiss cheese and rolled it up, generously sprinkling inside and out with Legg’s BBQ Seasoning. Then, we tied it with butcher’s string to keep it neat.

Cook Time: 6 hours at 225 degrees (107c)

Pellets: Pacific Pellet Gourmet BBQ Pellet Rancher’s Mesquite
Ingredients: Smoked Pastrami Pin Wheel
- 1 7lb. corned beef brisket
- 2 cups horseradish mustard, or your favorite flavor
- ¾ lb. Swiss cheese, sliced
- Legg’s Old Plantation BBQ Seasoning, to taste
- 1 cup beef stock

Directions: Smoked Pastrami Roll Ups
Butterfly your brisket, and brush on your favorite mustard. Lay your cheese slices across mustard. Sprinkle generously with your BBQ seasoning. Roll up brisket and tie securely with string. Sprinkle with more of your seasoning. Place into a 9×13 baking dish with the broth, we like foil pans for easier clean up. Lay meat seam side down in baking dish. Put it on the grill at 225 degrees (107c) for about 6 hours. You are looking for an internal temperature around 205 degrees (97c). The Pastrami will be butter tender when you probe it… I used my Maverick PT 732 and my ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Louisiana, Green Mountain, Royall, Memphis, Traeger wood pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Outdoor Oven, Lodge Sportsman’s, Brinkman and Weber. The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
