Smokin’ Nuts

We wanted a healthy snack, at least healthier than our usual. Our favorite market had bulk nuts on sale and using some of our favorite seasonings made them yummy and a lot cheaper than already smoked seasoned nuts. Plus, we could pick our favorite mix of nuts and seasonings.

I was talking with Josh Cary of All Things BBQ and this is a take on how he does his smoked nuts. This is so simple and you can use your favorite seasonings. I loaded up our Bull racks and did a smoke blend using a smoke tube.

These are so good you can’t stop eating them… And super simple to do!

Josh’s recipe;

We take unsalted peanuts (or any others you like) and put a little water on them. You could use oil, but no real reason. The water will help the rub stick to the nuts.

We use our favorite sweet/heat barbecue rub (your pick) and a little Cattleman’s Grill Carne Asada and coat them lightly.

Smoke them at 175 to 200 degrees until they are totally dry (a couple of hours). You can use something like a smoke tube for extra flavor, and can go heavier with the wood choice due to the fact that the nuts don’t absorb as much of the smoke flavor. We use pecan and cherry, but straight hickory is awesome too.

Directions: Smokin’ Nuts

These are super simple to do and you can use your favorite seasoning. I was surprised to discover I was out of Cattleman’s, so like so many times when cooking you substitute. We have some very nice rubs so we just picked 4 that we use a lot. Josh’s recipe say to wet the nuts with water or oil so the seasoning will stick. We substituted the water with Worcestershire sauce for another layer of flavor.

Just spritz your nuts down with Worcestershire sauce and mix with your seasoning of choice. Then, spread them out on your Bull Racks and you’re ready for the Green Mountain Grill. If you’re using a smoke tube get it going and set the grill for 175 degrees (79c).  Put your nuts on the grill until they are dry. It was about 2 hours for us. Let them cool a bit and bag them up.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Cooking In the Oven:

We have been getting requests for recipe conversions for the Pacific Living Outdoor Oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time.

It is the same thing, time and temperature is what it is all about. The Green Mountain grill is just like your oven except it uses wood pellets and has wheels.

I do 2 hours here at 175 degrees (79c)

Note: The Pacific Living Outdoor Oven also has a smoke box.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Louisiana, Green Mountain, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Outdoor Oven, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

Ingredients
  • 4lbs. raw cashews, divided
  • 2lbs. raw almonds
  • 2lbs. raw filberts
  • Worcestershire sauce in a spray bottle
  • Swimmin’ in Smoke Booty Shake
  • Green Mountain Grills Roasted Garlic & Chipotle Seasoning Blend
  • Chef of the Future Southwestern Seasoning Rub
  • Butcher BBQ Hickory Seasoned Salt
Instructions
