Texas Mustard Glazed Ham

Texas Mustard Glazed Ham we had an 11lb. Zaycon Foods ham “just” a lean delicious ham… No bones, added water, chemicals or fillers, no gluten or MSG. The mustard glaze was Brigg’s True Texas Mustard sauce. We slow smoked it for 2 hours with Pacific Pellet Mountain Maple and added a “Kiss of Smoke” with a smoke tube packed with some “Northwest Apple” pellets.

To Easy, with just two ingredients, ham and mustard sauce for a friend who thinks our recipes are too involved; this one has just two ingredients. But, oh so good!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe

Prep Time: 5 minutes
Cook Time: 2 hrs @225 degrees (107c)
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets: Pacific Pellet Gourmet BBQ Pellet Mountain Maple & Northwest Apple

Directions: Texas Mustard Glazed Ham

Score the ham with a knife to let more sauce in to the ham. I did a criss cross. You can do what you like or not even do it and it will still be good. Pour some sauce on and try to rub as much as you can into your cuts. That’s it; this have is so good we did not use any other seasoning.

Keep in mind that you’re just reheating this big boy as it is fully cooked with a very nice apple smoke finish. So, put it on the grill for 2 hrs @225 degrees (107c).

Easy and Awesome…

Note; normally you sauce the last 30 minutes of your cook so the sugars in your sauce don’t burn. Tonight when sauced first because our temp was low enough that it doesn’t burn.

Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

  • 1 5 oz. bottle of Briggs True Texas Mustard Sauce
