Extra Cheesy Mac & Cheese, Ken loves mac & cheese as long as it’s extra cheesy. He calls it the ooey gooey factor. Plus, our cold smoked cheese makes it even better. Patti invited her lovely friend Harriett over for lunch to try this new recipe. To make it a little fun she made it with wagon wheel shaped pasta to hold lots of the cheesy goodness. It’s also a great way to sneak in veggies or use whatever leftover veggies you might have on hand.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Sawtooth Wood Pellet Grill but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…
Extra Cheesy Mac & Cheese
A Wood Pellet Grill Recipe
Prep Time: 10 minutes
Cook Time: 45 minutes at 350 degrees (177c)
Grill: Sawtooth Wood Pellet Grill
Pellets: Pacific Pellet Gourmet BBQ Mountain Maple
Ingredients: Extra Cheesy Mac & Cheese
- cut pasta, cooked
- 1 23oz. jar salsa con queso (Mexican cheese sauce)
- 1 14oz. can diced tomatoes, undrained
- 1 10oz. package frozen spinach, thawed
- 1 Tablespoon Legg’s Old Plantation Seasoning Garlic Herb & Sun Dried Tomato
- 2 teaspoons white pepper
- 2 cups extra sharp cheddar cheese, thick sliced
- 2 cups Asiago cheese, thick sliced
- 2 cups Colby Jack cheese, thick sliced
- 1 stick butter, melted
- 2 cups Parmesan cheese crackers, crushed
- 2 cups Italian blend shredded cheese

Combine Pasta with Cheese Sauce
Directions: Extra Cheesy Mac & Cheese
In a large bowl combine pasta with cheese sauce. Mix in spinach, tomatoes and seasonings. Pour ½ into a large, lightly greased cast iron Dutch oven. Top with ½ of cheese slices. Repeat with remaining pasta and cheese slices. In a small bowl combine butter, crackers and shredded cheese until mixed well. Sprinkle on top of macaroni & cheese and into the Sawtooth Grill for 45 minutes at 350 degrees (177c).
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
