Easy Smoked Potatoes Au Gratin because a friend of Patti’s wanted a recipe for scalloped potatoes with cheese. That’s what au Gratin potatoes are. She also wanted a recipe she could make a day ahead without the potatoes turning black. So, we cooked the potatoes first and layered them the next day into our creamy cheesy sauce. Then, we topped them with more cheese and crispy bacon. Because everything is better with bacon. We then gave a “Kiss of Smoke” with a Wedgie loaded with Green Mountain’s Gourmet Blend BBQ Pellets. Perfect.

These were Sooo Good, they would be a good make ahead dish for tailgating and camping.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on one of our Grills or Smokers, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Easy Smoked Potatoes Au Gratin
A Wood Pellet Grill Recipe

Prep Time: 15 minutes
Cook Time: 30 minutes at 375* (190c)
Grill: Green Mountain Wood Pellet Grill
Pellets: BBQPelletsOnline

Ingredients: Easy Smoked Potatoes Au Gratin

  • 4 large Russet potatoes, cooked and sliced (Patti likes to leave the skins on)
  • 2 Tablespoons butter or bacon drippings
  • ¼ cup all-purpose flour
  • 3 ½ cups ½ and ½
  • 2 cups shallots or green onions, sliced
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon Date Night Doins Heat
  • 2 cups smoked cheddar cheese, shredded
  • Duck Fat spray

Ingredients Topping:

  • 2 cups bacon, chopped and cooked crisp
  • 1 cup smoked cheddar cheese, shredded
  • 1 cup parmesan cheese, shredded

Cooking Directions: Easy Smoked Potatoes Au Gratin

Spray 2-quart cast iron Dutch oven with duck fat. Sauté onions for 5 minutes and whisk in flour and cook until slightly browned.

Preheat the grill to 375* (190c) and light your wedgie for that “Kiss of Smoke“.

Slowly whisk in milk, then cheese and seasoning. Cook until cheese is melted and then gently fold in potatoes.

Combine topping ingredients in a small bowl. Sprinkle onto potatoes.

Place onto the GMG for 30 minutes at 375* (190c) for that “Kiss of Smoke”.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
