Brisket Machaca con Huevos, my mom made this for me as a kid. It has always been one of my favorites and have always loved “Big Beefy Burritos” because of her machaca. We used a few pounds of our smoked Tex-Mex brisket that we shredded and added onions, tomatoes, peppers, and eggs. Mom would have loved this one… Big, Tender and Juicy.

Machaca con Huevos (Machaca with Eggs) is shredded beef cooked with scrambled eggs, tomatoes, and onions.

We thought we would step away from the traditional smoked brisket you see everyone doing. We wanted to show how you can do so much more with all that “Big Beef” that will have everybody coming back for a second helping…or more.

You can feed a lot of people with a big brisket and we’ve done 35 pounds of Tex-Mex shredded Brisket with a “Kiss of Smoke”. So far, we’ve done a brisket pie, Mud pie, tacos, burritos, enchiladas, nachos, stuffed poblanos, and even ground a few pounds for burgers. It has been a delicious fun week on the grill!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on one of our Grills or Smokers, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Cook Time: 10 minutes
Grill: Green Mountain Wood Pellet Grill
Pellets: BBQPelletsOnline

Ingredients: Brisket Machaca con Huevos 

  • 2 lbs. Shredded Brisket, (See Recipe)
  • Salsa fresca, to taste we used about 2 cups
  • 1- 4 oz. can minced jalapenos, optional
  • 8 eggs, more or less to crowd size
  • 1 cup of sauce saved from the “Tex-Mex Brisket”
  • 2 or 3 small, sweet peppers, sliced (we like the color they add), optional
  • Shredded cheese of choice
  • Sour cream, to taste, optional
  • Cilantro, to taste, optional
  • Limes, sliced into wedges, optional
  • Package of tortillas, (we like extra large flour)

Cooking Directions: Brisket Machaca con Huevos 

Sauté the peppers and salsa until they are soft.

Add your brisket into the skillet and continue cooking.

Add a little sauce, you can skip this or use one of your favorite sauces. The recipe for this sauce is here “Tex-Mex” Shredded Brisket.

Scramble the eggs and stir them into the skillet continue cooking until it firms up nicely.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Monument, Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
