Tex-Mex Shredded Brisket, we thought we would step away from the traditional smoked brisket you see everyone doing. We wanted to show how you can do so much more with that “Big Beef” flavor that will have everybody coming back for a second helping.

We even came up with a “Tex-Mex Seasoning” and a sauce that you’ll love on many things all with a “Kiss of Smoke”.

Brisket is on sale here at $2.76 a pound! That is less than hamburger! You can feed a lot of people with a big brisket. We’ve done a brisket pie, tacos, burritos, enchiladas, nachos, stuffed poblanos, Machaca con Huevos and even ground a few pounds for burgers. It has been a fun week on the grill!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Backyard BBQ
A Wood Pellet Grill Recipe

Prep Time: 30 minutes
Cook Time: 6 hours @ 375* (190c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellets

Ingredients: Tex-Mex Shredded Brisket

Beef, Tex-Mex Shredded Brisket

  •  10 pounds Trimmed Brisket
  • Cooking oil

Rub, Tex-Mex

  • 1 ½ cup chipotle chili powder
  • ½ cup smoked paprika
  • ½ cup brown sugar
  • ½ cup black pepper
  • ¼ cup crushed red pepper
  • 2 Tbsp Butcher BBQ Honey Rub
  • 2 Tbsp Cocoa
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 1 Tbsp Butcher BBQ Hickory Salt
  • 1 tsp coriander powder

 Sauce, Tex-Mex 

  • 3 cups beef broth
  • 3 cups orange juice
  • ¼ cup smoked garlic (see recipe)
  • ¼ cup chopped cilantro
  • ¼ cup Tex-Mex Seasoning Rub
  • 2 smoked jalapenos, seeds removed and diced
  • 1 medium sweet onion, rough chopped
  • 1 each medium orange, yellow and red bell pepper, rough chopped
  • 1 Poblano pepper, rough chopped (ours was smoked)
  • 1 – 14 oz. can crushed tomatoes with green chiles, not drained

Cooking Directions: Tex-Mex Shredded Brisket

Trim your brisket and cut into 6-inch slabs. So that you can stack them in a large Dutch oven.

Heat the oil in your Dutch oven, season the meat with your rub and brown it a few pieces at a time.

When you have browned the meat stack it into your Dutch oven and cover with the sauce. You are now ready for the grill.

Preheat the grill to 375* (190c) and light your wedgie for that “Kiss of Smoke”

Place your Dutch oven onto the grill uncovered for 2 hours as most things won’t pick up much smoke flavor after that. Then, cover and continue cooking until “Fork Tender”. Your time here will vary as every cut of meat is different. Mine was ready in 4 more hours, yours may vary a bit one way or the other. The good thing is that you can’t over cook it.

You need to add more liquid to the sauce as it cooks down. Just add either broth or orange juice, as needed.

When the brisket is “Fork Tender” remove it from the Dutch oven and allow the sauce to simmer until it thickens to your liking. You’ll see that the sauce is a little chunky which is good. Or if you like a smoother sauce just run it through a blender.

When the brisket is cool enough to work with string it and add a little sauce to it.

Now it’s time the enjoy the fruits of your labor, we’ll be eating lots of brisket in one way or another all week! Life is Good… 

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
