Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Pacific Living Pizza Oven but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Barbequing lots of goodies at the Murrieta Farmer’s Market on Sundays Patti made sure we had lots of chicken so we’d have leftovers for some Smoky Chicken Enchiladas. Of course, if we sold out, as we often do, it would still be a win-win. But, we wanted smoked chicken for these awesome chicken enchiladas. The smokiness of the chicken plus lots of fresh veggies from the Market made a rich and delicious combination. We served it with Ken’s garlicky guacamole. And our Pacific Living Pizza Oven proved once again it’s not just for pizza!

 Smoky Chicken Enchiladas

 Prep Time: 15 minutes
Cook Time: 60 minutes at 350 degrees (177c)
Grill: Pacific Living Pizza Oven
Pellets: Lumberjack Mesquite

Ingredients: Smoky Chicken Enchiladas

  • 6 cups shredded smoked chicken; we used both white and dark meat
  • 2 cups fresh cilantro, chopped
  • 1 ½ cups shallots or green onions, chopped
  • 6 mini sweet peppers, chopped
  • 1 cup Pico de Gallo salsa
  • 1 10oz. can diced tomatoes with green chilies, drained
  • 1 Tablespoon chipotle powder
  • 1 teaspoon Country Bob’s Seasoning Salt
  • 3 cups sharp cheddar cheese, shredded
  • 1 28oz. can red enchilada sauce
  • 2 cups Mexican blend shredded cheese
  • 5 burrito size tortillas, we prefer flour

Directions: Smoky Chicken Enchiladas

In large baking pan add 1 cup enchilada sauce. In large bowl combine all ingredients, except remaining enchilada sauce and Mexican blend cheese. On each tortilla, place 1 ½ – 2 cups chicken mixture down center. Roll up and place seam side down on baking dish. Pour remaining enchilada sauce, then Mexican cheese blend evenly over tortillas.

Cooking Directions:Pacific Living Pizza Oven

Preheat the Pacific Living Pizza Oven to 350 degrees (177c) about 15 minutes. We put our Smoky Chicken Enchiladas on the racks and not the pizza stone. The stone is hotter than the racks so keep this in mind depending on what you are baking or roasting. We used mesquite pellets in the smoker box for that “Kiss of Smoke” flavor. Awesome!

This was so simple and hassle free we were surprised and delighted about the ease of cooking on the Pacific Living Pizza Oven. Turn it on, set temp., put your enchiladas in the oven and shut the door. After happily enduring 60 minutes of these wonderful aromas it was time to eat. Too Easy! The enchiladas are ready when the cheese is melted with a temp around 180 degrees (83c)

About Our Recipes

Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
