Grilled Avocado with Salsa Fresca. Our Salsa Fresca, sweet from the sweet peppers and Tomatillos with just a hint of jalapeno heat, nice. Now, put it into a grilled avocado. Warm, soft and creamy with a “Kiss of Smoke”.

We always enjoy cooking at the Murrieta Farmer’s Market. The people are great and we always come home with lots of fresh fruit and veggies.

Mike and Linda of Engle Farms sent home boxes of beautiful tomatoes, tomatillos and fragrant fresh basil, plus a huge assortment of fresh peppers. Thanks, friends. We used some Carnival Hot Virgin Jalapeno Olive Oil, sweet peppers, and four different varieties of tomatoes: Early Girl, Lemon Boys, Better Boy and German Giants.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Grilled Avocado with Salsa Fresca A Date Night Recipe

Prep Time: 10 minutes Cook Time: 3 – 5 minutes Grill: Green Mountain Wood Pellet Grill Pellets: Green Mountain Fruitwood Blend BBQ Pellets

A note on our ingredients used here. There is no right or wrong way to do this. It’s all based on what you have to work with and your taste. I have just discovered Calivirgin, Hot Virgin Jalapeno Olive Oil. It adds a nice layer of flavor to your dishes with just a touch of heat. I have used it where I normally use olive oil and been very happy with it on steaks and our grill fries.

Ingredients: Grilled Avocado with Salsa Fresca

  • 4 or 5 medium tomatoes, I used red, yellow and orange
  • 5 or 6 medium size Tomatillos, chopped
  • 5 or 6 green onions, chopped
  • Large sweet onion, diced
  • 2 or 3 mixed sweet peppers, chopped
  • 1 red jalapeno, chopped
  • 1 green jalapeno, chopped
  • ½ cup cilantro, chopped
  • 2 Tbsp. chopped fresh garlic
  • 2 Tbsp. Calivirgin, Hot Virgin Jalapeno Olive Oil (adds a touch of heat)

Directions: Grilled Avocado with Salsa Fresca

This is an easy one. Chop all your ingredients and put them in a bowl, mix well and refrigerate.

Serve as is or simmer a bit to soften it and blend a little before placing it into the refrigerator. Cut avocado in half and remove pit. Place flesh side down on your HOT grill. (450 degrees, 240c) these will go quick 2 or 3 minutes. That’s it…

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
