Fabulous Chicken Fajitas, Ken wanted fajitas and with Zaycon Foods chicken breasts that were a full pound each half breast we knew we would have plenty for our date night. We added all our favorite add ons and we had a delicious and pretty dinner. You guys have to check out Zaycon Foods, the finest quality chicken we have ever eaten. So tender and juicy.

The red pepper chili powder is a pungent, hot chili powder with a strong bite and the flavor intensifies as it is cooked. I love the Southwestern flair it adds to all of your grilling. But, you can do these on any kind of grill or a good cast iron skillet

A pellet Grill Recipe

Prep Time: 15 minutes
Cook Time: Sear at 450 degrees (230c) for 10 min., grill @ 350 degrees (177c) for 25 min.
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets: Pacific Pellet Gourmet BBQ Pellet Ranchers Mesquite

Ingredients: Fabulous Chicken Fajitas

  • 1 whole Zaycon chicken breast, cut in half
  • 1 envelope Weber chipotle marinade
  • 1 large sweet red pepper, sliced
  • 1 large sweet yellow pepper, sliced
  • 1 large sweet orange pepper, sliced
  • 1 large sweet onion, sliced
  • sour cream
  • salsa
  • cilantro
  • guacamole
  • cherry pepper relish
  • banana peppers
  • jalapenos
  • burrito size tortillas

Directions: Fabulous Chicken Fajitas

Marinate your chicken, we did for 2 hours. Then, off to the grill. I seared these for 10 minutes @ 450 degrees (230c) with a quarter turn @ 5 minutes for those nice sear marks or flavor bars as I call them. Then, grill them for about 25 minutes at 350 degrees (177c) looking for an internal temp around 160 degrees (72c). U.S.D.A. Safe 165 degrees (74c). Keep in mind that the meat will continue cooking for another 10 degrees after you pull it off the grill. Sauté the onions and peppers in your cast iron skillet. When the chicken is done pull it and let it rest a bit before slicing it. You’re ready to eat!

Cooking Directions: Green Mountain Wood Pellet Grill/Smoker

To prepare the grill for cooking, check your pellet supply – top off or change flavors as needed. Scrape grill grates off. Set the temperature to 450 degrees and press the “Start” button. Give the grill about 15 minutes to reach temperature and the grates to burn clean.

Note: You can set the start temperature anywhere you want. I do 450 (230c) for a quick cleaning burn.

After the grill is good and hot for your sear and place your chicken directly onto the grill and just let it hang out in the smoke and get happy for 10 minutes or so. At the 5 minute mark I gave the chick a quarter turn. After my 10 minute sear I flipper the chicken and grilled it at 350 degrees (177c) for 25 minutes. You’re looking for an internal temp around 160 degrees (72c). U.S.D.A. Safe 165 degrees (74c). Keep in mind that the meat will continue cooking for another 10 degrees after you pull it off the grill. Sauté the onions and peppers in your cast iron skillet.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
