Coffee Rubbed Chuck Roast
We have done a few big chuck roasts now, we think they are great. I am thinking about retiring my crock pot. What I like most about doing these big roasts is that someone always has them on sale. We made roast beef burgers, BBQ beef sandwiches and stringed beef burritos all week. Patti likes to put a piece of the meat in a bowl with no sides, just great beef. That is a lot of good eating for very little cash, with that full beef flavor. This guy was tender and juicy with a nice smoky coffee kick.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Louisiana Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Ingredients: Coffee Rubbed Chuck Roast
- 1 Large Chuck Roast
- 2 cups brewed coffee
- Garlic & onions, optional

Ingredients: Coffee Rub
- 1 cup dry roasted coffee, medium grind
- ¼ cup brown sugar
- 2 Tbsp. Country Bob’s Seasoning Salt
- 3 Tbsp, coarse ground black pepper
- 3 Tbsp. dry crushed garlic
- 1 Tbsp. garlic powder
- 2 Tbsp. Chipotle Chili Powder
- 2 Tbsp. Cumin
Directions: Rub
Mix all the ingredients in a container and shake to blend.

Directions: Coffee Rubbed Chuck Roast
Shake your rub onto the meat and work into the meat with your fingers. Then, put meat back into the fridge to let everything get happy. About an hour before cooking, pull it out and let meat come up to room temperature. (It will cook more evenly.)
Apply a heavy coat of rub for a good thick bark and put them on the grill. I smoked this guy at 225 degrees (107c) for 6 hours until I had an internal temp of 160 degrees (72c). Then, pull the meat and put it into a pan with a few cups of leftover coffee. We added garlic and sweet onions to the pan also and covered it with foil returning it to the grill. Smoke for about another hour looking for an internal temp of 200 degrees (93c), pull and let rest.
Now, you can either slice it or string it. We did both. Ken wanted to string it to mix with barbecue sauce for BBQ sandwiches and plain for burgers and burritos.

Cooking Directions: Smoked Coffee Rubbed Chuck Roast
To prepare the grill for cooking, check your pellet supply – top off or change flavors as needed. Scrape grill grates off. Set the temperature to 450 degrees and press the “Start” button. Give the grill about 15 minutes to reach temperature and the grates to burn clean.
Note: You can set the start temperature anywhere you want. I do 450 (230c) for a quick cleaning burn.
So after the grill comes up to temp and burns clean turn it back down to 225 degrees (107c). Place your chucky directly onto the grill and just let it hang out in the smoke and get happy for about 6 hours. You are looking for an internal temp of 160 degrees (72c). Then, pull the meat and put it into a pan with a few cups of leftover coffee. We added garlic and sweet onions to the pan also and covered it with foil returning it to the grill. Smoke for about another hour looking for an internal temp of 200 degrees (93c), pull and let rest until cool enough to handle. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
