Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Memphis Elite Wood Fire Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

We have wanted to do a Fatty “AKA Bacon Explosion” for a few weeks now. I have given this a lot of thought, wanting to do something a little off the beaten trail. We came up with a Carne Asada Bacon Explosion. Just AWESOME, with a smoky, not so subtle heat. The sun dried tomatoes we added are like candy they are so good. The cheese, chipotle peppers and the Carne Asada all came together with the sausage and bacon added up to Heaven on your plate. It was so good. We served this monster with some of Patti’s potato salad to chill down some of the heat. For lunch the next few days I sliced it for burgers and with an onion bun, they were great.

Prep Time: 1 hour
Cook Time: 3 hours
Grill: Memphis Elite Wood Fire Pellet Grill/Smoker
Pellets: Lumberjack Mesquite

Ingredients: Carne Asada Bacon Explosion

  • 4 lbs. hot Italian sausage
  • 2 ½ lbs. carne asada
  • 3 lbs. bacon
  • 1.5 lbs. Mexican Velveeta Cheese
  • 1 cup sun dried tomatoes
  • 1 cup Country Bob’s Sauces and Seasonings “Apple Chipotle”
  • 1 7oz. can of chipotle peppers
  • ¼ cup dried red pepper flakes
  • ¼ cup dried garlic
  • ¼ cup dried chopped onion
  • Chipotle chile powder, to taste
  • Simply Salsa Ten Pound Pepper Punch, to taste

Directions: Carne Asada Bacon Explosion

Do a nice dusting of the Ten Pound Pepper Punch and Chipotle chili powder on the carne asada and “Flash Grill” it. On the Memphis set your temp at 650 degrees (360c) and sear your meat. On, over and off, just about that fast. Pull the beef off and set it aside turning the ITC (Intelligent Temperature Control) down to 180 degrees (84c).

 Do a nice dusting of the Ten Pound Pepper Punch and Chipotle chili powder. This is HOT

Cover a large cookie sheet with foil and do your bacon weave, Try to keep the bacon tight so it will roll up neat. Leave a little at the end to overlap for sealing.

In a large bowl mix the sausage, garlic, onion, red pepper and a little of the chipotle peppers together.

Flatten the sausage out evenly over the bacon and layer your stuffing. I did the carne asada 1st and the Country Bob’s Sauce last. Hold back from the edges so you can seal it.

Roll it up into a tight log using the foil to form it. Keep it as tight as you can. When you get it rolled tighten it up again so you can the roll it onto your cooking grate. You are ready for the grill. We use the Memphis Elite Wood Fire Pellet Grill/Smoker. An insanely wonderfully versatile grill.

We smoked it for 1 hour at 180 degrees (84c), then 2 hours at 300 degrees (150c) looking for an internal temp of 165 degrees (75c) or better.

Cooking Directions: Carne Asada Bacon Explosion

 Open the lid and set the ITC (Intelligent Temperature Control) to 180 degrees (84c). After about five minutes you can shut the lid. Give it a few minutes to heat up.

Place your cooking grate directly onto the grill and just let it hang out in the smoke and get happy for an hour. This is referred to as “Smoking” or “Hot Smoking”, the temperature is 180 degrees (84c). This will open the pores so that the meat can pick up all the flavor of the smoke.

After an hour, turn the ITC (Intelligent Temperature Control) up to 300 degrees (150c). I did 2 hours here at 350 (174c).

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees, anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including the Louisiana, Memphis, Royall, Traeger wood pellet grills, Charmglow, Char-Broil, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles will fit pellet heads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste.
