Buffalo Onions, there is no one way to do them and they are super easy to do. They can be a different grilling adventure every time you make them! Our Buffalo Sauce recipe is better than most, on the mild side but packed with flavor. Easy to zip it up but as is it was a bit zippy for Patti.

The only thing that can hold you back is your imagination! Buffalo Onions make a smoky sweet side with a little zip that’s great for home or tailgating.

Give these a try, a thick slab of sweet onion, wrapped with thick sliced bacon, seasoned and brushed with our Buffalo Sauce. They are just that easy, too. cut, wrap, season, grill/smoke and a dab of sauce. You can smoke them or grill them, whatever you have the time for.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Buffalo Onions
A Wood Pellet Grill Recipe

Prep Time: 5 minutes
Cook Time: 20 minutes @ 400 degrees (205c)
Grill: Green Mountain Wood Pellet Grill “Davy Crockett”
Pellets: BBQPelletsOnline

Ingredients: Buffalo Onions 

  • Large sweet onion sliced 1 inch or more thick
  • Thick sliced bacon, (I like pepper bacon)
  • Chef of the Future Cajun Seasoning
  • 2- 12 oz. bottles Louisiana Hot Sauce
  • 1 stick of butter
  • 1/4 cup dried crushed garlic
  • 1/4 cup dried minced onion
  • 1 Tbsp. coarse ground black pepper
  • Toothpicks

Directions: Buffalo Onions

These are super simple. When I have the time I’ll just smoke @ 150* (65c) for an hour or so before adding any heat to the grill. Then, I grill them for about 20 minutes at 400 degrees (205c). I give them a quarter turn at 5 minutes then flip them at 10 minutes. Cooking times will vary due to how thick you sliced your onions. I like the onion with a little firmness to it so basically you are cooking the bacon to your liking. I just season them and then put a dab of Buffalo Sauce on both at the beginning and end of the cook.

I like to use large sweet onions and slice them about 1 inch thick. Then wrap then with thick sliced pepper bacon but use what you like. It takes about 2 slices of bacon to go around one of these onion slices. Wrap the bacon around your onion and secure with the toothpicks. Season them brush with sauce and you’re ready for the grill.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

About our Recipes

Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
