South Of The Border Rib Tips with a Chipotle Orange BBQ Sauce

 

South of The Border Rib Tips with a Chipotle Orange BBQ Sauce, we have been wanting to some rib tips for some time now. Well, we had a few pounds of them and now was the time. “Gitty Up Go”. I was thinking of a south of the border theme. We have some of Green Mountain’s South of the Border Seasoning Blend; I love this rub and have used it on all kinds of things. It blends with the juice of the meat and gives you an awesome chili coating  I did my tips with South of the Border rub and a chipotle orange BBQ sauce and smoked them with Pacific Pellet Gourmet BBQ Pellet pellets adding a nice smoky kiss of southwestern spices to our cook.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe

Prep Time: 5 minutes
Cook Time: 2 ½ hrs total, 1 hr @ 225* (107c) then 1.5 hrs. @ 350* (177c)
Grill:
Green Mountain Wood Pellet Grill/Smoker
Pellets: Green Mountain’s Texas Blend BBQ Pellets

Directions: South Of The Border Rib Tips

Do a nice coat on your Rib Tips with the Green Mountain’s South of the Border Seasoningblend and place them on the grill. I smoked these for 1 hour at 225* (107c). Then, pull them and wrap them in foil. It’s ok to stack them in the foil. Grill these for 1 hour at 350 degrees (177c). After an hour open the foil and do a heavy sauce (or not, I like the sauce). Wrap the foil back up for another 15 minutes…

The last 15 minutes take them out of the foil and just place them on the grill to caramelize the sauce. I like to do ribs to 190 degrees (87c) they are very tender and still holding together. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

A Wood Pellet Grill Recipe

I have been experimenting with my Chipotle Orange BBQ sauce and now it’s very, very good. Good ribs really are easy to do and will make your friends think you are “The Grill Master”. We have had friends over a few times and served this on chicken and ribs that were finger licking wonderful. The sauce is so simple with only 4 Ingredients.

Prep Time: 10 minutes Chipotle Orange BBQ Sauce

Ingredients: Chipotle Orange BBQ Sauce

  • 1 cup Spicy Honey BBQ sauce
  • 1 cup Sweet Orange Marmalade
  • 1 Tbsp. crushed fresh garlic, more or less to taste
  • 1 Tbsp. Chipotle chili powder, more or less to taste

Directions: Chipotle Orange Sauce

This is super simple with a bold flavor. Mix sauce ingredients in a bowl and put it into the microwave for a minute or so. You just want to heat it up a bit so everything will blend. After it heats, stir well and set it aside until you are ready for it. Refrigerate leftovers because you will find lots of things to add this sauce to.

Wrap Them in Foil

 

After an hour at 350* (177c) open the foils and give a coating of sauce to taste. Then seal them up go another 15 minutes here. I sauce then stack another layer.

About Our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
