Smoky Garlic Jalapeno Hot Sauce

 

Smoky Garlic Jalapeno Hot Sauce, I needed more Jalapeno Hot Sauce and Garlic Sauce this week. So, we loaded up our Bull Racks and put them on our gasser with a wedgie for a 2 ½ hours cold smoke.

We loaded up our wedgie with Green Mountain’s Texas blend pellets for that “Kiss of Smoke”. This time I went with a “Garlic” Jalapeno Hot Sauce. If you like garlic and Jalapeno’s this sauce is for you.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Smoky Garlic Jalapeno Hot Sauce
A Grill Recipe

Prep Time: 5 minutes
Cook Time: 2 ½ hrs. Cold Smoke
Grill: Gas
Pellets: Green Mountain Grill’s Texas Blend Pellet

Ingredients: Smoky Garlic Jalapeno Hot Sauce

  • 1lb. jalapenos
  • 1 cup peeled garlic cloves
  • 1 sweet onion, peeled & quartered
  • 6 tomatillos
  • 2 Tablespoons olive oil
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons sugar
  • 1 ½ cups water
  • ½ cup apple cider vinegar
  • ½ cup fresh cilantro
  • Cooking Spray (we use Duck Fat, our store)

Our Ingredients

Cooking Directions: Smoky Garlic Jalapeno Hot Sauce

Light your wedgie and set it onto the grill.

Spray your Bull Racks with cooking spray (we use Duck Fat). Then load your Bull Racks up with all the vegies you want to cold smoke. Place the Bull racks onto the grill with the wedgie. Keep in mind we are cold smoking so we won’t be lighting the grill today. Just let everything hang out in the smoke for about 2 ½ hours. I find if I go much longer than 2 ½ hours things pick up too much smoke and become bitter.

Let things cool down, I normally wait until the next day and do a rough chop on the peppers and toss everything into a blender. Blend until smooth. Pour everything unto a sauce pot and bring to a low boil. Simmer for about 5 minutes or so. Let cool and bottle. This sauce gets better as it ages a bit, 2 or 3 days…

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

About our Recipes

Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
