Slow Smoked Carnitas, we love anything you can wrap in a tortilla and when Juan Carlos showed us some awesome pork for .99 a pound. A dream is born… Slow Smoked Carnitas with a citrus kiss. We bought 20 pounds of Juan’s pork and used about 5 in our Slow Smoked Carnitas that we smoked for about 5 hours. It was all I could do to leave it alone because it smelled so good.

When it was finally ready, tender chunks of pork seasoned just right with a kiss of orange wrapped in a soft flower tortilla and piled high with goodies created Taco Heaven!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Slow Smoked Carnitas
A Wood Pellet Grill Recipe

Prep Time: 10 minutes
Cook Time: 1 hr. @ 225* (107c), 4 hrs. @ 300* (150c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellet

Ingredients: Slow Smoked Carnitas

  • 4 ½ lbs. pork sirloin roast (cubed)
  • Chicken broth, to cover
  • 1 large sweet onion, quartered
  • 2 navel oranges, quartered
  • 1 cup dark brown sugar
  • ¼ cup Taco seasoning
  • Red pepper flakes (to taste)
  • Garlic cloves (to taste)
  • Dried crushed garlic (to taste)
  • Dried crushed onion (to taste)
  • Cilantro
  • Sour cream
  • Requeson Cheese (you can use your favorite Mexican style)
  • Pickled jalapenos and carrots, on the side
  • Tortillas (we like flour)

Directions: Slow Smoked Carnitas

Cut pork into large cubes, quarter onions and oranges and toss it all into a large cast iron Dutch oven. Add seasoning and cover it all with the broth. Place it on the grill to pick up the smoke flavors for 1 hr. @ 225* (107c), then cover and go 4 hrs. @ 300* (150c). Stir every hour or so. It will be fork tender when it’s done.

Pull it off the grill, remove the meat from the liquid and let it cool until you can handle it. I just broke it into smaller chunks with my hands, or you can use 2 forks. Spoon some of the liquid and seasoning over the meat and mix it up and pile it on your tortilla.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
