Chili Corn Pudding, this is one of our 1st recipes I tucked into a folder today. One on my favorites that my mother made for the holidays. It brings back happy memories of times long gone. Hope you enjoy it as we have.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Chili Corn Pudding
A Wood Pellet Grill Recipe
Prep Time: 10 minutes
Cook Time: 50 minutes @400* (205c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellet
Chili Corn Pudding
Ingredients: Chili Corn Pudding
- ½ cup butter
- 1 ½ cups Bisquick type baking mix
- 2 eggs, beaten
- 1 15oz.can creamed corn
- ½ cup milk
- 1 7oz. can chilies, chopped
- 2 cups sharp cheddar cheese, shredded and divided
- 1 cup green onions, sliced
- 1 ½ Tablespoons chipotle powder

Directions: Chili Corn Pudding
In a large bowl cut butter into baking mix.
Add eggs, onion, corn and milk, blending until moist.
Pour half the batter into 8×8 greased glass baking dish.
Cover with 1 cup of cheese and chilies.
Pour on remaining batter.
Top with mixed cheese, chilies and chipotle powder.
Preheat the grill to 400* (205c) and light your wedgie for that “Kiss of Smoke”.
Just set your oven safe baking pan or skillet on the grill grate. Mom always did this in cast iron.
Cook for about 50 minutes or until a toothpick comes out clean when you use one to test for done.
Serve immediately.
Note: If there are any leftovers, this is great reheated with leftover cubed ham.

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
