Chicken Tacos, I told Patti that I wanting chicken this week. Well she found it on sale and came home with a lot of chicken. I wanted to do something along the lines of soft chicken tacos. Patti got me a nice 6 pounder that I smoked in a Mole sauce with a few handfuls of peppers.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on one of our Grills or Smokers, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe

Cook Time: 2 hour smoke @ 225* (107c) , 1 hour @ 400* (205c)

And Don Godke’s Downdraft on my Green Mountains Grills”. What the “DownDraft” does is hold the smoke a little longer in the cooking chamber. Adding more smoke flavor and making it easier to create smoke blends to your liking.
Ingredients: Chicken Tacos
- 1 chicken
- 2 – 16.9 oz. boxes of Mole sauce
- 2 cups of water
- Country Bob’s Sauces and Seasonings Seasoning Salt, to taste
- Chipotle chili powder, to taste
- Red pepper flakes, to taste
- Coarse ground black pepper, to taste
- Crushed dried garlic, to taste
- Dried minced onion, to taste
- Tien Tsin peppers, to taste. (I did 2 handfuls)
- Sweet peppers, to taste, (a few handfuls)
Condiments: Chicken Tacos
- Soft flour tortillas
- Shredded cheese
- Shredded lettuce
- Sweet onion, diced
- Tomato, diced
- Sour cream

Directions: Chicken Tacos
Preheat your grill to 225* (107c) and light your wedgie for that “Kiss of Smoke”.
Place chicken in a baking pan, season to taste. I say to taste because this was on the Zippy side of things. Way too hot for Patti.
Add the Mole sauce and water and throw in your peppers. Off to the grill.
I smoked this for 2 hours at 225* (107c) then covered it with foil and did an hour at 400 degrees (205c).
I pulled the chicken off the grill at an internal temp of 190* (87c) and let it cool a bit before stringing.I think the chicken flakes apart at the higher temp of 190* (87c).
I used 2 forks to string it.
Then plate it, drizzle some of the juices from the pan over it and you are good to go…
When the chicken reaches an internal temperature around 190* (87c) pull it off, cover it and let it rest for 5 to 10 minutes before string/pulling. U.S.D.A. safe is 165* (74c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including Monument, Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
