Chicken Stuffed Shells Primavera because the holidays are coming and you need something to do with your leftover turkey and veggies. We shared these with our neighbors, Eddie & Kevin, and they both loved them. They said they had all the goodies for a pot pie, but with pasta instead of crust. These were great with leftover chicken, too. But if you want to make it even easier use a rotisserie chicken from your local market. We used leftover carrots and broccoli, but you can use whatever veggies you like.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Backyard BBQ
A Wood Pellet Grill Recipe

Prep Time: 20 minutes
Cook Time: 40 minutes at 350* {175c}
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Fruitwood Blend BBQ Pellets

Ingredients: Chicken Stuffed Shells Primavera 

  • 5 cups shredded cooked chicken and/or turkey
  • 3 eggs, beaten
  • 15 ozs. Ricotta cheese
  • 5 cups shredded cheese, divided
  • 3 cups chopped veggies
  • 2 15oz. jars Alfredo sauce
  • 2 cups Parmesan cheese, grated
  • 2 teaspoons onion powder
  • 1 Tablespoon dried oregano
  • 2 Tablespoons grated smoked garlic
  • 1 box cooked extra large pasta shells
  • 2 foil baking pans, 12×9

Cooking Directions: Chicken Stuffed Shells Primavera 

Preheat the Grill Grates to 350* {175c} and light your wedgie for that “Kiss of Smoke”.

Cover the bottom of each baking pan with 1 cup of Alfredo sauce.

In a large bowl mix egg, ricotta cheese, 3 cups shredded cheese, veggies, chicken, and seasonings.

Gently fill pasta shells with mixture. We used an iced teaspoon.

Place stuffed shells in pan filled side up.

Mix remaining sauce with remaining cheeses. Pour over shells.

Place directly onto the Grill Grates for 40 minutes at 350* {175c}.

You can see when it is all bubbly and blended together.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temperatures.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temperatures less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes

Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
