Chicken Lasagna Florentine because Patti loves Italian food but can never find lasagna with a white sauce when she goes out to eat. Plus, with Thanksgiving so close we have lots and lots of turkey recipes, but not many for leftovers. This recipe was a keeper because she used lots of cheese and the spinach made it healthy. It was extra easy because you can make it the day before and pop it on the grill when you’re ready.
So, we’re doing practice recipes using chicken that can be adapted for chopped or shredded leftover turkey. Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 15 minutes
Cook Time: 50 minutes at 375* {190c}
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Gold Blend BBQ Pellets
Ingredients: Chicken Lasagna Florentine
- 12ozs. lasagna noodles, cooked and chilled
Sauce
- 7 cups shredded cooked chicken
- 2 cans cream of chicken soup
- 1 can cream of mushroom soup
- 1 soup can milk
- 1 14oz. can diced tomatoes with chilies, drained
- ¼ cup smoked minced garlic or to taste
- 2 Tablespoons fresh Thyme leaves, chopped
- 1 Tablespoon Loubier Italian Seasoning
Filling
- 12 oz. ricotta cheese
- 6 cups mozzarella cheese, shredded
- 2 eggs, beaten
- 1 10oz. package frozen chopped spinach, thawed and chopped
- 2 cups green onions, sliced
Topping
- 3 cups parmesan cheese, grated
- 3 cups Italian blend cheese, shredded

Cooking Directions: Chicken Lasagna Florentine
In a large cast iron Dutch oven blend all sauce ingredients.
Simmer until heated through.
In a large bowl mix all filling ingredients.
In each of two 9×12 foil pans add 1 cup of sauce.
Add 5 noodles slightly overlapping.
Add ½ of filling then ½ of sauce. Repeat.
Top with parmesan & Italian cheese blend.
Preheat the grill to 375* {190c}.
We placed our foil pans onto a “Bull Rack” tray for easy handling. Love the Bull racks, they add lots of shelving in a grill and double up in the kitchen for KP duty.
We did these for 50 minutes @ 375* {199c}, you could see all that cheese melting and blending.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temperatures less than 250* (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill.” Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood, and even charcoal purists. Almost any of our recipes can be done on any good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
