We were invited to a neighbor’s potluck and asked to bring an appetizer. Ken wanted to bring little meatballs “Buffalo style”. Using our favorite ground beef aka Zaycon Fresh, which is so very lean, our meatballs didn’t shrink the way ordinary fattier ground beef does. So, instead of golf ball size we had more like tennis ball size. Ken seasoned them with Swimmin’ in Smoke Hot Chik Bait (his favorite) and Swimmin’ in Smoke Cattle Call (Patti’s favorite) and basted them with wing sauce. You can also use Frank’s or your favorite hot sauce. The 3lbs. of Zaycon Fresh ground beef made 20 meatballs. Our friends want us next time to bring 5lbs. worth, in other words they were a huge hit grilled to perfection using our Char Griller Akorn Kamado.
