I love roasted garlic, add a little rosemary and things just get better. The trouble I have is in finding garlic big enough for the grill. The only time I see the big stuff is on TV. We cook a lot with garlic and buy it by the 5 pound bag already peeled. Not having any big bulbs for the grill I thought I would try to build a birds nest of rosemary and fill it with garlic like eggs.

I made a foil pan and put a layer of rosemary for the garlic to lay on. Sprayed a little olive oil on it and a shot of steak seasoning then put it on a on the grill. I smoked it while I had a roast going at around 300 for about an hour or until soft.

Prep Time: 5 minutes
Cook Time: 30 minutes smoke @ 225 degrees (52c), 1 hour Roast @ 300 degrees (149c)
Grill:  Wood Pellet Grill
Pellets: Lumberjack

Ingredients:Birds Nest Garlic

  • Garlic cloves, peeled
  • Olive Oil
  • Fresh Rosemary
  • Steak seasoning

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

    Oh, oh… I have a bulb of “Elephant Ear” garlic… PERFECT. Will try this next weekend when I smoke the pork shoulder with a new rub that my GF sent to me. Thanks for sharing! Hugs and well wishes. 🙂
