Bacon Wrapped Sweet Onion Slabs, a smoky sweet side for home or tailgating? Try these, thick slab of sweet onion, wrapped with thick sliced bacon and topped with garlic herb butter. They are just that easy too, cut, wrap, season, grill/smoke and dap with your garlic butter. You can some them or just grill them whatever you have the time for.

- Large sweet onion, sliced 1 inch or more thick
- Thick sliced bacon
- Green Mountain Roasted Garlic and Chipotle seasoning

Directions: Bacon Wrapped Sweet Onion Slabs
These super simple, slice about an inch thick. Wrap with bacon and pin it with a toothpick. Season ad butter and you are ready for the grill.
When I have the time I’ll just smoke for a ½ hour before adding any heat to the grill. Then I grill them for about 20 minutes at 400 degrees (205c). Cooking times will vary due to how thick you sliced your onions. I like the onion with a little firmness to it so basicly you are cooking the bacon to your liking. I put a dab of garlic on both at the beginning and end of the cook.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
