Big Bite Pork Chops
Patti went to see Jacob at T&H Meats and came back with these 2 inch pork chops as a surprise for me. I had said I wanted to grill some breaded chops and she went and got them for me. The breading was crisp with the sweetness of Country Bob’s Sauce. That’s Patti looking like a walking billboard for Country Bob’s Sauce, she can put it so many things. Served with our Garlic Skillet … Oh Man they were good!!!

Cook Time: smoke 30 min. Grill 30 min. @ 300 Degrees (150c)
Grill: Traeger
Pellets: Lumberjack Apple
Ingredients: Pork Chops
- 5 bone in 2 inch loin pork chops
- 1 ½ cups bread crumbs
- 1 ½ cups cheese crackers
- ¾ tsp. Country Bob’s Season Salt
- ¾ tsp. Traeger’s Poultry and Pork Seasoning
- 2 eggs, beaten
- ¾ cup Country Bob’s Sauce
- ½ cup orange juice

Directions: Breading
Put the crackers in a plastic bag, seal it and work it over with a rolling pin. Mom gave us a marble rolling pin. It’s heavy and really gets the job done. Patti loves using the rolling pin, unless she’s annoyed, then she takes at them with a small hammer! Combine dry ingredients in a bowl. Combine the wet ingredients in a separate bowl.
Dip the pork chops in the egg mixture, then into the bread crumbs. You can repeat this until you get a good coating on the chops. You are ready for the grill …

Cooking Directions: Traeger
Open the lid and set the dial to “Smoke”, after about five minutes shut the lid. Give it about 10 minutes to heat up. Patti has lined the drip pan with foil for me, it makes for easier clean up.
Place your chops directly onto the grill and just let it hang out in the smoke and get happy for 30 minutes or so. This is referred to as “cold smoking”; the temperature is around 150 degrees. 30 minutes of cold smoking is not enough to have any cooking effect on your meat but it is enough to open the pours up so that the meat can pick up all the flavor of the smoke.
After 30 minutes, turn the digital control up to 300 degrees and pull the meat off the grill.
When the grill comes up to 300 degrees put the chops back on for 15 minutes preside. Keep in mind that on a Traeger you do not have to turn the meat because of how it cooks. But we like the grill marks…
Grill These for 15 Minutes per Side U.S.D.A. safe for pork is 165 degrees (74c). I use a Maverick ProTemp Instant Read Thermometer for checking meat temperatures.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
