Uncle Bubba’s Zippy Taco Burgers is another camp meal Uncle Bubba made with his “Shredded Beef”. He went “South of the Border” with a 6-hour slow smoke until he had a mountain of “Fork Tender Spicy Shredded Beef”. One night he made us “Zippy Taco Burgers” topped with his “Cowboy Queso” and we ate burritos in one style or another along with tacos and nachos with grilled jalapenos all week!
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 15 minutes
Cook Time: 2 hrs. @ 250* (122c) Smoke, then 4 hrs. @ 350*(177c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellets
Ingredients: Uncle Bubba’s Shredded Beef
(Let me say here that this WAS SPICY, so season To Taste)
- 7 pounds of beef, cut into cubes
- Fajita seasoning, to taste
- Chipotle chili powder, to taste
- Can of chopped Green Chilis
- Smoked minced garlic, to taste
- Dried minced onion, to taste
- Sliced jalapenos, 3 big ones
- Goya Mojo Criollo, to cover
- Duck Fat, cooking spray (our store)

Cooking Directions: Uncle Bubba’s Shredded Beef
Spray your Dutch oven with the “Duck Fat” (our store) and lay down a layer of the cubed meat. Season with the Fajita seasoning and do another layer of the meat and season. Do this until all the meat is seasoned and in the Dutch oven.
Slice the jalapenos and toss them in. Let me say this about the jalapenos. I don’t think of them as a “Hot” pepper, but these were ringers!!! They were so hot that they brought tears to my eyes, LOL…
Add the green chilies, chipotle chili powder, garlic, and onion, then top it off with the Goya Mojo Criollo. It will all cook down and blend nicely.
Place it on the grill at 250* (122c) uncovered for about 2 hours to pick up that “Kiss of Smoke”. Most things won’t pick up any more smoke flavor after 2 hours. So, bring the heat up to 350* (177c) for about hours until the meat is “Fork Tender”.
When the beef is cool enough to work with shred with 2 forks. Then, it’s time to eat!
I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood, and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
