We have been getting requests for diabetic friendly recipes. This is our 1st recipe with that in mind. Nobody wants to eat bland tasteless food so we wanted to do something to make your taste buds smile. What do you think about a Taco Pizza? Huwa’s Steak Burger cooked up for taco filling; lean, flavorful just for starters. Add loads of sweet peppers and tomatoes from the Murrieta Farmer’s Market and your taste buds are at Heaven’s door. The best part, it is Gluten free, low carb, low fat and diabetic friendly. As healthy as it is yummy.

A Pellet Grill Recipe

Prep Time: 30 minutes
Cook Time: 15 minutes
Grill: Louisiana Wood Pellet Grill
Pellets: Oak

 Ingredients: Taco Pizza

  • 1 lb. Huwa Steak Burger
  • 8 oz. pkg. Mexican cheese blend
  • Bisquick Gluten Free baking mix, recipe on box for the dough
  • Assorted sweet peppers, grilled and sliced, to taste
  • Jalapenos, sliced, to taste
  • Garlic, crushed and to taste
  • 1 sweet onion, chopped
  • 1 container Salsa Fresca
  • 1 jar La Victoria Cilantro Salsa
  • Taco seasoning
  • Olive oil

Directions: Taco Pizza

This was a fun one to do, so many different layers of flavor. Start your grill. Mix your pizza dough according to the instructions on the box. You can use any dough you like; we did this one because it was Gluten free. We grilled about 6 sweet peppers for that sweet smoky taste and they add a lot of color, too. Brush them with a little olive oil and put them on the grill just long enough to soften them a bit.

We used a taco seasoning for the meat. Brown it up with some chopped onions and garlic. Drain the meat. Our Huwa Steak Burger was so lean so there wasn’t anything to drain off. Set it aside until you’re ready to top your pizza.

When you have you dough rolled out brush 1 side of it with a little olive oil and put the oiled side down on the hot grill. It won’t fall through the grill; I am using Grill Grates here on our Louisiana Pellet Grill. I had some trouble getting the sticky dough onto the Hot grates. I am going to get a Pizza Paddle for our next one.

Cooking time is going to vary on your grill. You are looking for the dough to firm up and rise a little. About 5 to 7 minutes to brown the bottom. Then pull it off brush some olive oil on uncooked side, turn it over (oil side down) and build your pizza.

 We used La Victoria Cilantro Salsa for pizza sauce. I just spooned it on with some crushed garlic until I had a nice layer of salsa.

Add the cheese, taco meat, sweet peppers. Drain the Salsa Fresca and top the pizza. We are ready for the grill.

Cooking Directions: Louisiana Wood Pellet Grill

To prepare the grill for cooking, check your pellet supply – top off or change flavors as needed. Scrape grill grates off. Turn the “Feed Control” High and press the “Start” button. Give the grill about 15 minutes to reach temperature and the grates to burn clean.

So after the grill comes up to temp and burns clean turn it back down to 400 degrees (200c). Place your pizza directly onto the grill grates and just let it hang out in the smoke and get happy for 6 to 10 minutes or so. After the cheese melts and blends check the bottom. It’s ready when it is toasty.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees, anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste.
