Oktoberfest Sausage and Potatoes
The weather here is turning coolish; it got down to 70 degrees on the patio tonight. Patti and I had to put on sweaters, we almost froze to death. This is a hearty and easy recipe for backyard barbeques and tailgating. Ken thought it was great with his favorite beer; Patti had it with a good red wine. The apple cider vinegar added an interesting kick and the sausage was nice with a smoky garlic kiss…
As a special treat we used some of Lumberjacks new “Lumber Jill” Italian Blend garlic wood pellets adding a nice smoky garlic flavor to our recipe. Very nice, you have got to try these.

Cook Time: 45 minutes @ 350 degrees (174c)

Pellets: Lumberjacks new “Lumber Jill” Italian Blend
Ingredients: Oktoberfest Sausage and Potatoes
- 2lbs. smoked Polish sausage, cut into chunks
- 2lbs. russet potatoes, cooked and cut into chunks
- ½ lb. peppered bacon; rough chopped (Patti uses clean kitchen scissors)
- 1 sweet onion, rough chopped
- 1 ¼ cups apple cider vinegar
- 1 ¼ cups honey mustard

Directions: Oktoberfest Sausage and Potatoes
In a medium size Lodge Cast Iron Dutch oven cook bacon until crisp. Add onion and continue cooking until onion is soft. Stir in sausage. Blend in mustard and vinegar. Add potatoes and toss gently until coated. Place on the second shelf in your Pacific Living Outdoor Oven and bake for 45 minutes at 350 degrees (174c).

Cooking Directions: Pacific Living Outdoor Oven
Cooking in the Pacific Living Outdoor Oven is a snap. If you are going to use the smoke box fill it up first with either wood chips or pellets. I like Lumberjack pellets because there are so many different kinds and low ash. (Easy clean up).
Turn on the propane tank. Open the oven door so you can see and hear when the burner lights. Turn the control knob to the high position and hold it in. At this time press the igniter button. You’ll be able to hear and see the burner light. Continue to hold the control knob for about 10 seconds for the burner to get hot.
Close the door and preheat the oven to your desired temp. You may have to adjust it up or down until you reach your temperature but once you hit it the oven will hold it. We did these at 350 degrees (174c) uncovered for 45 minutes.

Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
