
Hammy Mac & Cheese
Hammy Mac & Cheese, we got an emergency phone call from friends who had a lot of leftover Christmas ham and needed an easy recipe for Sunday brunch. We made them a quick, easy, kid friendly recipe that they could double and make the night before. They wanted it mild so we used diced canned tomatoes, for a zippier recipe use canned tomatoes with chilies.
Hammy Mac & Cheese Pacific Living Outdoor Oven Recipe
Prep Time: 10 minutes Cook Time: 45 minutes at 350 Degrees (177c) Grill: Pacific Living Outdoor Oven Pellets: BBQPelletsOnLine
Ingredients: Hammy Mac & Cheese
- 2lbs. smoked ham, cubed
- 1 ½ lbs. elbow macaroni, cooked
- 2 cans cheddar cheese soup
- 1 soup can low fat milk
- 2 14oz. cans diced tomatoes, we like the garlic basil
- 1 ½ lbs. sharp cheddar, cubed
- 1 Tablespoon Dijon mustard
- 1 Tablespoon Swimmin’ in Smoke Booty Shake seasoning
- 1 Tablespoon white pepper
- 4 cups Italian blend cheese, shredded

Directions: Hammy Mac & Cheese
In a large bowl blend all ingredients except shredded cheese. Pour into greased large cast iron Dutch oven. Sprinkle on shredded cheese. Preheat your Pacific Living Outdoor Oven to 350 Degrees (177c) and place your Dutch oven “uncovered” on the shelf for about 45 minutes or so. Just heating everything up and blending the cheeses… I put some hickory wood pellets in the smoke box for that “Kiss of Smoke”.

Place All of the Ingredients into a Large Dutch Oven
Top With Shredded Cheese and into the Pacific Living Outdoor Oven

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Monument, Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

Hi Don,
I just added the new print or save Option but I don’t like it because it leaves out the pictures to save on ink. I like the pictures. The way I file them is to do a cut and paste and put it into a word doc. Then into a file by grill. Not knowing your PC skills Ii you need help with that email me and I’ll send you my phone number and walk you thru it.
