Costa Rican Coffee Glazed Pork Skewers is like a trip to the tropics, but without the cost or the sunburn. Brewed coffee is a great tenderizer for any cut of pork or beef. It also makes a rich, savory marinade and sauce with notes of rum (or extract) and molasses plus a whisper of chocolate.  With a “Kiss of Coffee Smoke” from a Wedgie.

Marinate your pork for 4-6 hours, then boil and reduce your marinade for a luscious grilling sauce.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe 

Prep Time: 20 minutes & 4-hour marinade
Cook Time: 30 minutes @ 400* (205c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Fruitwood BBQ Pellets

Ingredients: Costa Rican Coffee Glazed Pork Skewers 

  • 2lbs. lean pork, cut into cubes
  • 1 teaspoon olive oil
  • 1 cup chopped sweet onion
  • 1 pineapple, cut into cubes
  • 1 red bell pepper, (cut for the skewers)
  • 2 teaspoons ground ginger
  • 4 cloves minced smoked garlic, (see recipe)
  • 2 chopped Serrano chilies
  • 2 Tablespoons molasses
  • 2 cups brewed strong coffee or ½ coffee & ½ espresso
  • ½ cup dark rum or rum extract
  • 1 Tablespoon ground coffee
  • 1 Tablespoon softened butter
  • 2 teaspoons Chef of the Future Floribbean Rub & Seasoning
  • 1 teaspoon ground cinnamon
  • 1 teaspoon unsweetened cocoa
  • 1 teaspoon corn starch
  • Wooden skewers soaked in water for 15 minutes

Our Ingredients

Cooking Directions: Costa Rican Coffee Glazed Pork Skewers 

In a medium size Dutch oven sauté onion, chilies, and smoked garlic in oil until softened.

Blend in remaining ingredients (except pork & corn starch).

When mixture is cooled place in large freezer bag. Add pork and coat well.

Place in refrigerator for 4-6 hours. Occasionally turn bag.

Remove pork from marinade and place on skewers with the pineapple cubes.

Add the corn starch and boil and reduce your marinade for a luscious coffee glaze.

Pre-heat the grill to 400* (205c). Light your Wedgie for that “Kiss of Smoke“.

Season and place the pork skewers directly onto the “Hot” Grill Grates.

I gave these a roll about every 7 minutes or so and a brush of the coffee glaze until they reached an internal temperature of 140* (60c), about 30 minutes.

When the meat reaches an internal temperature around 140* (60c) pull it off, cover it and let it rest for 5 to 10 minutes before serving. U.S.D.A. safe is 140* (60c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
