Caesar Marinated Chicken Leg Quarters
It’s been a long day, plus 97 degrees of dry heat. But, we still have to have dinner. Thanks to our Pacific Living Outdoor Oven we made an easy three ingredient dinner and kept the kitchen cool. We love doing recipes with “on hand” ingredients and served with cold sliced tomatoes this was perfect. Patti made enough to have some really good cold chicken for lunch the next day.

Prep Time: 10 minutes
Cook Time: 45 minutes at 400 degrees (205c)

Pellets: Pacific Pellet Gourmet BBQ Pellets Northwest Apple

- 4 chicken leg quarters
- 1 cup fresh lemon juice
- 2 cups “lite” Caesar Salad dressing
- ¼ cup fresh minced garlic

Directions: Caesar Marinated Chicken Leg Quarters
Marinate chicken in remaining ingredients. Chill for at least 4 hours or overnight. Place chicken in one layer on foil lined baking dish. Preheat your oven to 400 degrees (205c) and place the chicken on the rack. Bake for 45 minutes. I like an internal temperature around 180 degrees (82c) because of how the meats just flakes apart at this temp. U.S.D.A. safe is 165 degrees (64c) for chicken. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note:
The bottom stone and it gets “HOT” so you need to stay right with it or you will burn what your are cooking. I only use heavy cast iron or baking dishes here. For most things I have found that it is better to use the middle shelf. You can use a stone here or not depending on your cook.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Louisiana, Green Mountain, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Outdoor Oven, Lodge Sportsman’s, Brinkman and Weber. The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
