Brisket Mud Pie, I love pot pies, the flaky crust a rich sauce with “Big Chunks of Beef”! Add a “Kiss of Smoke” to that and I am speechless… We used our little GMG Davy Crocket tailgater to make a camp meal every will remember…

We thought we would step away from the traditional smoked brisket you see everyone doing. We wanted to show how you can do so much more with all that “Big Beef” that will have everybody coming back for a second helping…or more.

You can feed a lot of people with a big brisket and we’ve done 35 pounds of Tex-Mex shredded Brisket with a “Kiss of Smoke”. So far, we’ve done a brisket pie, Mud pie, tacos, burritos, enchiladas, nachos, stuffed poblanos, and even ground a few pounds for burgers. It has been a delicious fun week on the grill!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
 

Prep Time: 10 minutes
Cook Time: 30 minutes @ 425* (218c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellets

Ingredients: Brisket Mud Pie 

  • 2 lbs. Cubed Brisket, (See Recipe)
  • 2 cups beef broth
  • 1 cup Butcher BBQ “BBQ Mud”
  • 2 TBSP flour
  • 1 TBSP smoked minced garlic
  • 1 tsp bacon dripping
  • 1 large, sweet onion, rough chopped
  • 2 packaged pie crusts
  • 1 egg, for an egg wash

Cooking Directions: Brisket Mud Pie 

Sauté the onions in the bacon dripping until they are soft.

Add the broth, BBQ Mud, garlic to the onions and continue cooking until blended.

Stir in the flour and cook until it thickens, just a few minutes will do the job.

Mix the brisket and sauce together in a large bowl.

We used Lodge cast iron serving dishes for our pie crust.

Roll out your pie crust in form into your serving dish.

Fill the dish with your brisket mix being careful to keep the edge of the crust clean so you can seal the top. It’s ok to pile it high…

Place the top crust over it trimming as needed with a knife of kitchen shears pinch the edges together. Cut a couple of slits into the top to release the steam as it cooks.

When it’s all together do an egg wash for a beautiful flaky brown crust.

Preheat the grill to 425* (218c) and bake your Mud Pies 30 minutes or the crust is brown to your liking.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood, and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
