Bacon Cheeseburger Calzones because Ken loves bacon cheeseburgers and Patti wanted one of his awesome calzones. It was extra easy because we made some ingredients the night before and put it all together for our special date night.
We tried these 2 different ways. 1 with a large oblong patty and then one with ground hamburger meat. Both seasoned the same way. We found the 1 with just the ground hamburger was better. It was easier to eat, and the cheese melted all through the meat. We used our “South Carolina-Style Mustard Barbecue Sauce” on a pile of seasoned hamburger sautéed with onions and Black Forest Thick Cut Bacon to top it off.
Then, into the GMG Pizza Oven for about 6 minutes.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 10 minutes
Cook Time: 6 Minutes, turning every 1 ½ minutes, 300* (150c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain BBQ Pellets Gourmet Blend
Ingredients: Bacon Cheeseburger Calzones
- 1 1lb. ball of pizza dough (makes 2 calzones)
- 1lb. ground sirloin 97/3
- 1 medium sweet onion chopped
- ½ lb. Black Forest Thick Cut Bacon, cooked
- 2 cups your favorite pizza/pasta sauce
- 1lb. mozzarella cheese, shredded
- Date Night Steak Seasoning, to taste. See our store (or your favorite seasoning)
- ½ cup our “South Carolina-Style Mustard Barbecue Sauce”
- 1 egg whisked with a tablespoon of water
- Corn meal

Cooking Directions: Bacon Cheeseburger Calzones
Let the dough rise, I give this a few hours. Then, roll it out, let it rise again.
Season and cook the hamburger with the chopped onions, drain and set aside until ready for filling your calzone.
When your dough has risen sauce half of it and load it up with cheese. Add a nice layer of meat top with a little of the mustard sauce (to taste), and then the bacon.
Brush the egg wash around the edge to help seal the dough and fold it over. Use your finger or a fork to seal the edges. We think a fork works better for sealing the edges. Brush the top with the egg wash for a nice golden-brown calzone.
Sprinkle corn meal on your pizza peel, put your calzone into the GMG pizza oven. I set the grill temp. to 300* (150c) and that gave me a temp of 451* (233c) on my pizza stone. I like the lower temps on the stone as it gives things time to melt and blend with out burning the crust.
I did a turn every 1 ½ minutes for 6 minutes until it was a beautiful golden brown.
NOTE: Your calzone will SLIDE EASILY on the pizza peel with the corn meal on it. Be careful you don’t lose it.
I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.
