Awesome Date Night Sirloin. Been a long week this week and we were really looking forward to a nice quite evening. Patti got nice 2 inch sirloin for the grill then whipped up some garlic mashed potatoes and a batch of skillet biscuits for us. A very nice evening indeed…

I did a reverse sear smoking the meat until I had an internal temperature of 100 degrees (37c). Then, pulling the meat off the grill and turning the heat up to 450 degrees (230c) getting my grill grates good and hot before putting the meat back on. This is referred to as a “Reverse Sear”, the advantage to doing this is that you end up with rare meat in the middle surrounded by the more done meat just on the outside edges.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Prep Time: 5 minutes
Cook Time: 1 hour low smoke, 8-10 minutes grill
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets: Pacific Pellet Gourmet BBQ Pellet

Directions: Awesome Date Night Sirloin

Do a nice rub on your steak then place it in your GMG grill to smoke for about an hour. You are looking for an internal temperature of 100 degrees (37c). Then, pull the meat off the grill and turning the heat up to 450 degrees (230c) getting my grill grates good and hot before putting the meat back on… Grill Grates start searing at 350 degrees (177c).

Cooking Directions: Green Mountain Wood Pellet Grill/Smoker

So season the meat and put it directly on the grill @ 225 degrees (107c) until you reach an internal temperature of 100 degrees (37c). Then, pulling the meat off the grill and turning the heat up to 450 degrees (230c) getting my grill grates good and hot before putting the meat back on. Get your grill grates good and hot before putting the meat back on… Grill Grates start searing at 350 degrees (177c).

You can just do a “Hot and Fast” cook if you want to eat right now..

When the grill comes up to temperature put your meat back onto the grill. I did this steak for about 10 minutes before it reached an internal temperature of 125 degrees (53c), pull it. This will be rare cover it and let it rest for 10 minutes before serving. “Perfect” for us… Keep in mind that the meat will continue cooking for another 10 degrees after you pull it off the grill.

If you like it done a little more pull it when the meat reaches an internal temp around 130 degrees (55c) pull it off. This will be medium rare. So for medium pull it at 140 degrees (60c) and overdone 160 degrees (72c). I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.
