Ribs N Beans = BBQ heaven! Ken loves his ribs covered in Briggs True Bacon Bourbon BBQ sauce, but Patti wanted something different and Briggs True Texas Mustard Sauce filled the bill deliciously. We had our friend Harriett over to break the tie for which was best…she picked both.
With the ribs we put on a batch of Kens Famous Baked Beans Redux taking a great cook and making it even better. We also did a smoke blend by putting Green Mountain’s Texas Blend BBQ Pellets for that “Kiss of Smoke”.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 10 minutes
Cook Time: 5 hours @ 300* (149c)
Grill: Sawtooth Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellets
Ingredients: Ribs N Beans
- 4 racks pork ribs
- Butcher BBQ Premium Rub, to taste
- Date Night Doins Date Night Heat Seasoning, to taste
- Briggs True Bacon Bourbon BBQ Sauce, to taste
- Briggs True Texas Mustard Sauce, to taste

A Wood Pellet Grill Recipe
Remove the membrane from the back of the ribs. This lets your seasoning into the meat. Sometimes this may not be convenient. If that is the case then just score it with a sharp knife. See link for how: https://datenightdoins.com/ribs-aggressive-cook/
Generously season both sides of ribs with your seasoning Butchers BBQ Premium Rub and Date Night Heat. I like to let my ribs sit for an hour or so for the rub to get happy, overnight being even better.
You’re ready for the grill. Smoke for 2 hours at 300 degrees (149c). Then, pull the ribs off and wrap in foil. Put the ribs back on the grill for 2 hours. After an hour unwrap the ribs and sauce them well. Leave the foil loosely folded so the sauce can caramelize for 30 minutes or so.
If you are doing Kens Famous Baked Beans Redux add them now.
Your ribs will be done when you have an internal temperature of 190 to 200 degrees. These were such tender and juicy ribs that they will have you licking your fingers. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Outdoor Oven, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
