WoW!!! Our Ultimate Biscuit and Gravy Breakfast Bake made it into Green Mountains Cook Book! We love biscuits and gravy, and I am always thinking how to make something better. I like to pile a stack of french fries on my biscuits and smother then with gravy. You just can’t do better than that. Patti and I have been thinking about a holiday breakfast picking up all the flavors of the grill. We came up with the ultimate in biscuits and gravy in our “Ultimate Biscuit and Gravy Breakfast Bake”, which would also be awesome for brunch or dinner!

Envision a layer of hash brown potatoes, topped with biscuits. Then, smothered with cheese and covered with creamy scrambled eggs. Then, literally buried in rich, thick sausage gravy cooked off on the grill with a “Kiss of Smoke”. Oh my, slap my face and shut the front door this is so good.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Ingredients: Ultimate Biscuit and Gravy Breakfast Bake

  • 2 lbs. sausage
  • A handful of garlic cloves 8-10, chopped (to taste)
  • Red pepper flakes (to taste)
  • 2 large sweet onions, diced
  • ¼ cup flour, you may need a little more
  • Milk as needed (sometimes I use ½ gallon)
  • Worcestershire sauce, a splash
  • 2 7.5 oz. packages Pillsbury Buttermilk Biscuits (20 biscuits)
  • Hash brown potato patties, we used 11 patties
  • 4 cups shredded cheese, we liked sharp cheddar
  • 8 to 10 eggs, beaten

Directions: Ultimate Biscuit and Gravy Breakfast Bake

Make your sausage gravy. Use your own recipe or ours above and set it aside. Beat the eggs with about ½ cup of milk and set aside. Take a 9 x 13 oven safe baking dish and line it with foil for easy clean up. Spray it with a cooking spray. Line the bottom of your pan with the potato patties and top with the biscuits. Cover them with cheese and pour the egg mix over that. Now cover the whole thing with your sausage gravy. Awesome! You’re ready for the grill.

Place everything directly onto the grill and just let it hang out in the smoke and get happy for 40 minutes or so. When it’s done you’ll see where the biscuits rise to the top and it browns nicely.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temperatures.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Cooking In the Oven:

We have been getting requests for recipe conversions for the oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time. It is the same thing, time and temperature is what it is all about. The Grill is just like your oven except it uses wood pellets and has wheels. Do 40 minutes here at 350 degrees (177c) for 40 minutes.

About Our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

    Was somewhat underwhelmed at the flavor. That was probably due to my method and the fact my family doesn’t like spicy. The recipe as is, is too large for my family, so I cut it half (mostly). I also cooked it in three disposable medium loaf pans (that way I could make a spicy one for me!). One and a half potato patties fits perfectly in the bottom of these loaf pan. I also did not make enough gravy and had too much sausage. Will adjust all of that next time.

    Suggestion: It would be nice if the cooking temperature was included in the print version of the recipe at the bottom of the page.

    Can I do this on the smoker instead of grill

      You are using the like an oven so with that if you can get up to temp it won’t matter what you cook it in or on. Take pictures for us…

    I cooked the eggs about 75% done first. Scrambled. Wanted to keep the scrambled egg texture and not have it blend in with the gravy. Put them in the freezer while prepping the rest and add midway during the cooking process so they’re not overdone.
