Uncle Bubba’s Texas Poppers, because we love poppers and Uncle Bubba knows poppers! He takes nice jalapeno peppers takes the seeds out and stuffs them with cream cheese and smoked brisket just to get started. Then, wraps them with a slice of thick cut bacon. To finish them off he brushes them with his Uncle Bubba’s Whisky BBQ Sauce. All with a “Kiss of Smoke”!
The folks over at Earthworks Supply (Bull Racks) sent one of their new Jalapeno Popper Racks for us to try out. It sure makes doing a batch of poppers easy. Easy clean up, just pop it into the dishwasher. You need to check these out. We only did 15 big poppers but I think you can do 20 easily. Maybe 30 if you use smaller peppers, but we used the biggest ones we could find.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas Blend BBQ Pellet
Ingredients: Uncle Bubba’s Texas Poppers
- Jalapenos, we did 15
- Brisket, sliced or cubed for each pepper
- Cream cheese of choice, (we used onion chive)
- Thick sliced bacon, 1 slice for each popper
- Uncle Bubba’s Whiskey BBQ Sauce

Cooking Directions: Uncle Bubba’s Texas Poppers
Wash your peppers and pat them dry. This are easy, you just cut the stem off and clean the seeds out. We used a melon baller for this.
Then fill about 1/3 of the pepper with cheese. Slide a strip of brisket into the pepper as far as it will go. Add more cheese if desired. It’s OK if the brisket sticks out of the top a bit.
We cut the brisket into strips about 3/8 by 3/8 in diameter, then around 3 inches long. Just right to fit into our peppers. If your peppers are smaller you may want to cut your brisket strips smaller to fit.
Then wrap the poppers with bacon and pin with a toothpick. That’s it! Just place it in your Popper Rack.
Preheat the grill to 350* (177c) and light your Wedgie for that “Kiss of Smoke”.
When the grill comes up to temp place your poppers on the grill. For about 40 minutes or until the bacon is done to your taste. The last 10 minutes of your cook brush your peppers with Uncle Bubba’s Whiskey BBQ Sauce.
Note: Patti wears food prep gloves because of the oil from the jalapenos.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
