Uncle Bubba’s Reverse Seared Tri-Tip was off the hook. With the pandemic beef has been hard to find and good tender beef even harder. In our travels around our new home in Oklahoma/Arkansas we met Delton at Beefmaster BBQ & Meat Market in Fort Smith.

We were able spend some time with him talking BBQ and sampling his great BBQ it was a nice time as I love to talk BBQ. We left with some of his BBQ and a very nice Tri Tip. It was the best beef we’ve had in over 4 months! And it was everything thing you would want in a Tri Tip, fork tender and juicy. It was love at first bite!
Uncle Bubba is working on a new steak seasoning he wanted to do a taste cook with so he grabbed up this tri tip and seasoned it with his new seasoning and did a reverse sear on our Green Mountain Grills tailgater! I can’t wait to try his new “Texas Brisket Rub”!!!
He also tested his new Maverick BT-30 Wireless BBQ Thermometer called the “STAKE”, Truly Wireless Food Thermometer, affordable and very nice.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 5 minutes
Cook Time: 20 minutes in the smoke @ 250* (122c), 20 min. Sear @ 400* (205c)
Grill: Green Mountain Wood Pellet Grill Davy Crockett
Pellets: Green Mountain’s Texas Blend BBQ Pellets
Ingredients: Uncle Bubba’s Reverse Seared Tri-Tip
- 1- 4lb. tri tip roast
- Duck Fat, (Our Store)
- Uncle Bubba’s Steak Rub, (Coming Soon)
Directions: Uncle Bubba’s Reverse Seared Tri-Tip
Preheat your Davey Crockett Tailgater to 250* (122c). I love this little grill because it’s easy to set up for camping and tailgating at only
65 pounds and runs on 12 VDC.
Trim off any excess fat and the silver skin. Give the tri tip a light spray of the Duck Fat (Our Store) and a nice coat of your seasoning. The “Duck Fat” works as a binder for your seasoning and helps with browning while adding another layer of flavor.
Insert the “STAKE” and you are ready for the grill.
We did 20 minutes at 250* (122c) until we reached an internal temperature of about 109* (42c). Then, we pulled our tri tip off the Tailgater and set it aside. We then brought the grill temperature up to 400* (205c).
When the Grill Grates are a screaming 400* (205c) put the tri-tip on for 10 minutes per side with a quarter turn at the 5 minutes mark.
When the meat reaches an internal temperature around 120* (49c) pull it off the grill, cover it and let it rest for 5 to 10 minutes before serving. This will be rare, U.S.D.A. safe is 125* (52c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer, and the new Maverick BT-30 Wireless BBQ Thermometer called the “STAKE”.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood, and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
