Sweep the Kitchen Hot Sauce
We always enjoy cooking at the Murrieta Farmer’s Market on our Louisiana Wood Pellet Grill. The people are great and we always come home with lots of fresh fruit and veggies. Mike and Linda of Engle Farms sent home boxes of beautiful tomatoes, tomatillos and fragrant fresh basil, plus a huge assortment of fresh peppers.
I had all kinds of peppers, sweet ones and hot ones with some in between. This recipe is a Tabasco Style Hot Sauce and will work with any kind peppers you have on hand. And it is simple…
Sweep the Kitchen Hot Sauce
Prep Time: 15 minutes
Cook Time: 1 ½ hours, until soft
Ingredients: Sweep the Kitchen Hot Sauce
- Peppers, I used a mix, stemmed
- Tomatillos, about 12, peeled and quartered
- ½ cup Cilantro, chopped
- ¼ cup crushed garlic
- ½ tsp. salt
- 50/50 water and white vinegar, you need enough to cover the peppers. I used 3 cups each
Simmer until Soft
Directions: Sweep the Kitchen Hot Sauce
Real easy. Throw peppers into the pot with stems removed first. Peel and quarter the Tomatillos, toss those in the pot. Throw in the cilantro, garlic and salt, cover with equal parts water and vinegar. Simmer until soft.
Some folks like to add some sugar. We thought the sauce was sweet enough from the sweet peppers and tomatillos and came out with a nice orange in color.
Let cool, run it through the blender until smooth. Then bottle. I had some bottles that I had before. It is hard to pour this sauce into the little holes in the bottles. I found that a turkey baster does a nice job.
Sweet, Not too Hot with Tons of Flavor
