Smoked Garlic Skillet
Smoked Garlic Skillet

Smoked Garlic Skillet,
I love smoked garlic, and it only gets better with sweet onions and bacon. This is a recipe you can only do if you are slow smoking. The garlic takes an hour and a half to cook. I have been doins a “Garlic Skillet” for some years now and I find I like it best just as a simple side. I almost always make a big skillet to use the leftovers in recipes where I want to bring in the flavors of smoked garlic, onions and bacon.

Sometimes Patti insists I add mushrooms and pile it on our steak.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Note: these pictures for this recipe were taken on 5 different wood pellet grills.

Ingredients: Smoked Garlic Skillet

  • ½ lb. pepper bacon (I like ends & pieces)
  • 2 cups peeled garlic (we add more, but we love garlic)
  • 2 large sweet onions, rough chopped
  • Coarse ground black pepper (to taste)

Directions: Smoked Garlic Skillet

Using a large cast iron skillet, add the bacon and garlic. Place it directly on the grill about 250* (122c). The bacon fat will render (melt) providing the moisture for the garlic to cook. The garlic will take awhile depending on how hot your grill is and if you have a “Hot Spot”.

Stir the garlic every now and then to keep from sticking. After an hour or so the garlic should be getting soft.  Stir in the onion. I like them just as they are, still a little crisp. About 30 minutes, again depending on your grill.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Sawtooth, Louisiana, Memphis, Royall, Traeger pellet grills, Char-Griller, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Pizza Oven, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

  1. Sounds delicious!

I must admit that I got a chuckle while reading the article accompanied with the recipe:

“…add the bacon and garlic….The bacon fat will render (melt)….Our grilling styles are healthy and low fat”

    1. You got us on that one Carol. We can’t do everything low fat, like bacon. You want this lower fat use less bacon but that’s no fun.
Because everything is better with bacon…
