Quarnitas Tacos, a great quarantine meal for the whole family. Rich and delicious fork tender pork carnitas for tacos, burritos or enchiladas with a “Kiss of Smoke” on our 7-year-old Green Mountain Grill Davy Crockett tailgater. This is a great little grill and it’s perfect tailgating and camping cooking also!
We had more than a few meals this week and the neighborhood smelled wonderful for about 5 hours!
We were going to call this “Our Quarantine Carnitas”. Not really liking that name I posted some pictures and asked my Facebook friends for suggestions.
Ron A. suggested Quarnitas! That sounded like fun and now here it is. In all it’s delicious glory.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
Prep Time: 20 minutes
Cook Time: 5 ½ hours at 300* (149c)
Grill: Green Mountain Wood Pellet Grill
Pellets: Green Mountain’s Texas blend BBQ Pellet
Ingredients: Quarnitas Tacos
- 10 lbs. pork butt, cut into large cubes
- 1 – 7 oz. can chipotle peppers in adobo sauce, chopped
- 1 small can of Green Chilies
- 2 cups orange juice
- ½ cup dried minced onion
- ½ cup lime juice
- 2 Tablespoons red pepper flakes (optional)
- 2 Tablespoons coarse ground black pepper
- 2 Tablespoons cumin
- 1 Tablespoon dried oregano
- 1 teaspoon sea salt, to taste
- Cooking spray, we use “Duck Fat” (Our Store)
- Your favorite taco toppings

Cooking Directions: Quarnitas Tacos
Cut the pork into cubes, I like to do 2 to 4-inch cubes. You could call this a “Dump Style” carnitas because I just dumped everything into my Dutch oven.
For easy clean up spray your Dutch oven with a good cooking spray. We use “Duck Fat” because it adds another layer of flavor to everything.
Place all the pork into your Dutch oven, add the dry seasoning, chipotle and garlic. Pour the orange and lime juice over the seasoning to help mix them. Give them a stir and you’re ready for that “Kiss of Smoke”.
Preheat the grill to 300* (149c), because there is little to no smoke above 250* I loaded a Wedgie with Green Mountain’s Texas Blend BBQ Pellets for that “Kiss of Smoke”.
Place your Dutch oven directly onto the GMG for 5 ½ hours giving it a stir every hour or so. It really is that easy…
It’s ready when the pork is “Fork Tender”.
I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250* (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

About our Recipes
We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
