Prime Rib Reverse Seared, Patti brought home a nice prime rib roast for me to smoke. I sure do love her. We thought over all the ways you can do a prime rib roast and we decided we would do a reverse sear. This means that we’ll smoke it until it comes up to an internal temp of 115 degrees (47c) and then finish it with a hot sear on the grill.  We did not even need a knife to eat. This was fork tender, juicy with just a kiss of rosemary. It was so good!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood pellet patio heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Pellet Grill Recipe

Prep Time: 5 minutes
Cook Time: 3.5 hours total cook time
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets:
Green Mountain’s Gourmet Blend BBQ Pellet

Ingredients: Prime Rib Reverse Seared

  • Prime rib roast (this one was about 5 lbs.)
  • Big Dick’s Dry Rub
  • 1 cup red wine ( more if needed, Patti needed more)

Directions: Prime Rib Reverse Seared

Give your Prime rib roast a good dusting with your Big Dick’s Dry Rub. Set it in an oven safe dish, (we used a Lodge skillet) pour in the red wine. We used GMG’s remote probe. We inserted it and we are ready for the grill. We smoked it for 1.5 hours at 150* (66c), and then we turned the heat up to 250* (122c) for another 1.5 hours. We put a Wedgie on the grill with the roast for a garlic smoke boost. Baste every so often with the wine in the skillet dish. We were looking for an Internal Temperature of 115* (47c). When you reach 115* (47c) pull it off the grill and set it aside as you turn the grill up to 400* (204c) to get your Grill Grates good and hot. Do a good sear on all sides of your roast until you come up to an Internal Temperature of 125* (52c), this will be rare.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
