“Poor Man’s” Burnt Ends are “Off The Hook”! I love Burnt Ends and not being able to afford the high cost of brisket can never get enough of them. I got the idea for our “Poor Man’s Burnt Ends” from Larry Wolfe and his ”The Wolfe Pit” Face book Group where he shows us how to do them with chuck roast.

So, I have done a few cooks of what we are calling our “Poor Man’s” Burnt Ends and Tips now, this last one with stew meat. I remembered stew meat as a tough, cheap meat needing long cooking time. Not so any more, it’s still tough and needs loving care in cooking but it is no longer cheap at $4.99 a pound. A nice chuck roast is a better choice at a dollar or more less a pound.

Tonight I thought I would put a bit of a twist on these by adding garlic, onions and chipotle. “Off The Hook” meat candy with a chipotle twist!

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

Poor Man’s Twisted Ends
A Pellet Grill Recipe

Prep Time: 20 minutes
Cook Time: 2 hours @ 225 (107c), 3 hours @ 300 degrees (149c)
Grill: Green Mountain Wood Pellet Grill/Smoker
Pellets: Green Mountain’s Texas Blend BBQ Pellet

Ingredients: Poor Man’s Twisted Ends

  • 6 lbs. stew meat
  • GMG’s South of the Border seasoning rub
  • 1 jar Grandville’s Gourmet Extra Spicy BBQ Jam
  • 2 ½ cups beef broth
  • ½ cup Garlic Wine Vinegar
  • 2 Tbsp Buffalo Chipotle Mexican Hot Sauce
  • 2 lg. sweet onions, cut into wedges
  • 2 handfuls whole garlic cloves

Directions: Poor Man’s Twisted Ends

Brown the meat is a large cast iron skillet, we use Lodge.

Then, add the browned meat to an oven safe baking dish, add all the remaining ingredients mixing well. Put baking dish onto the grill for 2 hours @ 225 (107c) stirring every hour. Then, turn the grill up to 300 degrees (149c) for 3 hours stirring every hour until the meat is tender and the sauce is thick..

You are looking for the sauce and juices to blend and caramelize with the meat to be fork tender.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Outdoor Oven, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
