Loaded Mashed Potatoes
We love potatoes fixed all kinds of ways. Ken has never found a way he didn’t like. Being our Memphis Wood Fire Grill/Smoker can bake just as well as smoke and grill Patti came up with this recipe for a new way with baked potatoes full of all the goodies. We smoked them alongside the chicken we made and they picked up all the rich smoky flavor you don’t get using your inside oven. The parmesan on top gave them a nice crispy crust. These can be made the night before and just pop them on your grill to reheat.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Memphis Elite Wood Fire Grill/Smoker and with all of its features we rarely cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood burning stove, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…
Loaded Mashed Potatoes
A Pellet Grill Recipe
Prep Time: Loaded Mashed Potatoes
Cook Time: 1 hour @ 325 degrees (165c)
Grill: Memphis Elite Wood Fire Pellet Grill/Smoker
Pellets: Lumberjack Pecan
Ingredients: Loaded Mashed Potatoes
- 2lbs. russet or red potatoes, cubed (We always leave the skins on.)
- 1 cup green onions, sliced thin
- 7 slices peppered bacon, cooked crisp and crumbled
- ¾ cup buttermilk
- 3 Tablespoons butter
- 3 Tablespoons minced garlic
- ½ lb. cheese, we used shredded cheddar
- ½ teaspoon Country Bob’s Seasoning Salt
- 1 cup Parmesan cheese, grated

Directions: Loaded Mashed Potatoes
Boil potatoes until just soft when pierced with a fork. Drain well. Mash to taste, Patti likes them still chunky. Blend in rest of ingredients until butter and cheese is melted. Pour potato mixture into greased 2 qt. glass baking dish.
Sprinkle on Parmesan. “Bake” on the grill for an hour @ 325 degrees (165c) until hot and top is crispy.

Cooking Directions: Memphis Wood Fire Pellet Grill/Smoker
Open the lid and set the ITC (Intelligent Temperature Control) to “180” degrees (84c). After about five minutes you can shut the lid. Give it a few minutes to heat up.
If you want to ad smoke flavor to your potatoes place your potatoes directly onto the grill and just let it hang out in the smoke and get happy for 30 minutes or so. This is referred to as “Smoking” or “Hot Smoking”, the temperature is 180 degrees. 30 minutes of smoking is not enough to have any cooking effect on your food but it is enough to open the pores so that it can pick up all the flavor of the smoke.
After 30 minutes, turn the ITC (Intelligent Temperature Control) up to 325 degrees (165c). I did 1 hour here at 325 (165c). They came off the grill with a nice crisp crust.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees, anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Cooking In the Oven:
We have been getting requests for recipe conversions for the Pacific Living Pizza Oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time. Do these for 1 hour @ 325 degrees (165c).
It is the same thing, time and temperature is what it is all about. The wood pellet grill is just like your oven except it uses wood pellets and has wheels.
About Our Recipes
We do our recipes on our patio where we have a lineup of grills, including Louisiana, Green Mountain, Memphis, Royall, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Pacific Living Pizza Oven, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.
The important thing to keep in mind is TIME & TEMPERATURE. You can even do some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
