Kens Famous Baked Beans Redux because we love taking a great recipe of ours and making it even better. Ken’s been working on this recipe for over thirty years and these are the best yet.

The BIG difference is we are now 5 cameras better and thought we would also do a video.

Our friends didn’t really care about the BBQ and sides we served. They always fuss about the beans. I make 6 pounds of these at a time now in hopes of a few leftovers for later. I like these beans either hot or cold they are that good. Because we both love garlic we added lots, but you can modify it to your own taste.

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe

Prep Time: 20 minutes
Cook Time: 6 hours @ 300* (149c)
Grill:
Sawtooth Wood Pellet Grill
Pellets:
Green Mountain’ Fruitwood Blend BBQ Pellets

Ingredients: Kens Famous Baked Beans Redux

  • 6lbs. canned baked beans (we like Bush’s) with bacon and brown sugar
  • 1lb. maple bacon, chopped into 2” pieces
  • 2 sweet onions, rough chopped
  • ¼ cup minced garlic, (plus 5 cups peeled garlic cloves to your taste)
  • 1 Tablespoon liquid smoke
  • ½ cup Worcestershire sauce
  • 2 cups dark brown sugar
  • ½ cup spicy brown mustard
  • Cooking Spray (We used Duck Fat)

Sauté Bacon, Onions and Minced Garlic

Cooking Directions: Kens Famous Baked Beans Redux

Spray large Dutch oven with cooking spray. (We used Duck Fat)

Sauté bacon, onions and minced garlic until bacon is limp cooked. Thoroughly blend in remaining ingredients.

Place directly onto the grill at 300 degrees for 6 hours or until done to your taste. You want a darker thicker baked bean cook them longer, same goes if you want them lighter don’t cook them as long. This is truly one of those recipes that you cook “To Taste”.

Note: I have made the beans from scratch, long cook. But using canned beans is easier and it is still a long cook. Just use the best canned beans you can find.

I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.

Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

Cooking In the Oven:

We have been getting requests for recipe conversions for the oven. I tell folks all the time that cooking on a Wood Pellet Grill/Smoker is just as easy as cooking in your oven. Just about anyone can do it and do it well. Think about it. You set your control knob to the temp you want, put your meat in and leave it for a set time. It is the same thing, time and temperature is what it is all about. The Grill is just like your oven except it uses wood pellets and has wheels.
I do 6 hours @ 300* (149c).

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….

    Just curious what size your Dutch oven is. I know you say large but how many qts would that be

        Thank you for the reply. The recipe looks great I have a CampChef pellet grill all I need to do now is get a dutch oven only thing I may do is reduce the amount since I’m a single senior.

          Lorne, you don’t need a Dutch oven for this. Sometimes when we are doing these to take somewhere we do them in foil pans. Only about a $1. I always put them on a cookie sheet for easy handling…

    I had actually thought about doing that but I do like cast iron as well. I have about 6 frypans in various sizes I use almost daily. Your recipe convinced me that I just can’t live without a nice cast Dutch oven. I’m looking forward to trying the recipe out in the very near future.

    Finally made your Baked Beans. I halved the amount and used way less Garlic. Other than that they are the best beans I have had the good fortune to try. Thank Youvso much for posting this recipe.
