Jalapeno Lime Chops were big tender 2- inch chops kissed with our Jalapeno Lime Splash that we made just for this recipe. Awesome on chops, like limes on steroids! Kissed by Jalapenos with a whisper of smoky garlic. A bright, sassy taste, no heat just delicious!
We did an overnight marinade with the Jalapeno Lime Splash, there were 2-inch chops so we did a reverse sear for that “Kiss of Smoke”!
Thinking about it I like chops just about any way they come. We found some amazing whole pork loins, we knew they’d be tender and juicy. We cut this one into 2-inch boneless loin chops.
Patti and I have set one night a week just for us. It’s our date night. We usually put something special on one of our Grills or Smokers, but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme. Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. Cook Time: 45 min. smoke @ 225* (107c), 15 min. sear @ 400* (205c)

Cooking Directions: Jalapeno Lime Chops
We like big tender pork chops so we always get a whole pork loin and cut our own chops at around 2-inches thick. You can buy them already cut but they are about a dollar more a pound. We cut our pork loin into thirds. One for chops, one for a loin roast and then one we can do any way we want later. We keep them in the freezer until needed.
Place your chops into a zip lock bag with around a cup of Jalapeno Lime Splash and marinate over night in the refrigerator.
When ready set your chops out and let them come to around room temperature.
Preheat your Grill Grates to 225* (107c) and light your wedgie.
Place your chops onto your Grill Grates and let them get happy in the smoke. We smoked them for about 45 minutes until we had an internal temperature around 100* (37c). Then pull them off the grill, cover them and turn the grill up to 400* (205c).
We your Grill Grates are “Screaming Hot” place your chops back onto them. Give them a splash of your Jalapeno Lime Splash.
We gave them 3 minutes and did a quarter turn, another 3 minutes and a flip and a splash of your Jalapeno Lime Splash. Then do the same on this side.
You are looking for an internal temperature around 140* (60c).

When your chops reach an internal temperature around 140* (60c) pull them off, cover and let them rest for 5 to 10 minutes before serving. U.S.D.A. safe for pork is 145* (62c). Keep in mind that the meat will continue cooking for another 5 to 10 degrees after you pull it off the grill. I use a Maverick ProTemp Instant Read Thermometer for checking meat temps.
Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke so it does not matter what kind of pellet you are using.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.
Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
