Jalapeno Bacon Jam because everything is better with bacon! Our jam is a pound of jalapeno bacon slow cooked with apples, onions, smoked garlic, and jalapenos in to a sweet and spicy topping. Rich and savory with a little sweet heat that makes a great appetizer, topping on cheese and crackers, dogs and, of course, burgers. Awesome on scrambled eggs or toast with your morning coffee. You’ll be tempted just to eat it with a spoon.

We picked up some thick sliced Jalapeno bacon last week from “Raider Red Meats”. It just happens I had been thinking of making some bacon jam for a burger topping. (Have You ever heard me say I LOVE BIG BURGERS!)

Patti and I have set one night a week just for us. It’s our date night. We usually put something special on our Green Mountain Wood Pellet Grill/Smoker but sometimes we cook inside. We always eat outside on our patio where it is very comfortable with a rainforest theme.  Wood Pellet Patio Heater, little lights, candles, lanterns, and surround sound. We enjoy a little wine, or strawberry margaritas using frozen strawberries for ice, good food, music and sometimes a dance or two…

A Wood Pellet Grill Recipe
 

Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients: Jalapeno Bacon Jam 

  • 1 lb. bacon, cut into 1″ pieces (I wanted BIG pieces)
  • 1 large, sweet onion, rough chopped (I wanted BIG pieces)
  • 1- 7 oz. can diced Jalapenos
  • 1 large apple, rough chopped
  • 1/2 c. brown sugar
  • 1/4 c. maple syrup
  • 1/3 c. apple cider vinegar
  • 2 TBSP smoked minced garlic, (see recipe) or garlic to taste
  • 2 TBSP butcher’s grind black pepper

Cooking Directions: Jalapeno Bacon Jam 

Cut up your bacon, apple and onion and set aside.

Place the bacon into a skillet and cook until crispy. Use a slotted spoon and place the bacon onto a paper towel, reserving about a tablespoon of bacon fat in the pan.

Add onions and apples to your skillet and sauté in the bacon drippings, stirring often until they start to caramelize. (10-15 minutes)

Stir in your garlic, jalapenos, black pepper, brown sugar, maple syrup, vinegar, and cooked bacon.

Stirring often continue cooking until the liquid reduces and it thickens to your taste. About 10 to 15 minutes.

Remove from heat, let cool and grab a spoon!

NOTE: I did a rough chop on the bacon, onion, and apple because I want “Big Chunks” to spoon on to my burger I was making this for. You can cut these finer to spread if you like.

About our Recipes

We do our recipes on our patio where we have a lineup of grills, including Green Mountain, Uuni Wood Fired Pizza Oven, Sawtooth, Louisiana, Royall, Memphis, Traeger pellet grills, Char Griller side box smoker, Saber, Charmglow, Char-Broil, The Big Easy, Lodge Sportsman’s, Brinkman and Weber. I call it our “Wall of Grill”. Our grilling styles are healthy and low fat and will fit pelletheads, gas, natural wood, and even charcoal purists. Almost any of our recipes can be done on any kind of good BBQ.

The important thing to keep in mind is TIME & TEMPERATURE. You can do our recipes on any grill, even some of them in the oven or crock pot, but, then you lose all the flavors you get from cooking outdoors. But sometimes it does rain.

Remember that a recipe is simply an outline; it is not written in stone. Don’t be afraid to make changes to suit your taste. Take it and run with it….
